I just want to say a few words about two homebrew shops that are closing there doors forever.
Larry’s (27 years) and Mountain homebrew (17 years) in the Seattle area. This is completely shocking to me. These were institutions of “higher homebrew learning” that taught literally thousands of people how to brew. Beer, wine, cider, mead, soda... you get the drift.

My beer seems a little flat tonight...

It's that time of year again. Time for rich foods and strong dark beer. This is our recipe of the month(s)

Winter Warmer O.G. 1.066-68 ABV about 7%
Grain Bill:
10 Lb. Maris Otter 2-Row
1.25 Lb. 10 L. Crystal malt
4 Oz. Chocolate malt

Single step infusion mash @ 153 ̊ for 60 min.
90-minute boil:

18 AAU Magnum hops, boil 60 min.
1 Oz. Amarillo hops, ( originally E.K.Golding for this recipe) last 5 min. of boil.

12 Oz. Dark Brown sugar, add last 10 min. of boil.

Yeast:
1275 Thames Valley Ale -or- 1028 London Ale
Ideal pitching rate: 235 billion cells. Ferment Temp: 64-68 ̊F

Extract version:
6.6 Lb. Maris Otter extract
1 Lb. of Light dry malt extract

1 Lb 10 L. crystal malt
4 Oz. Chocolate malt

12 Oz. Dark brown sugar, add last 10 min. of boil

20 AAU Magnum hops, boil 60 min.
1 Oz. Amarillo hops, last 5 min. of boil.

Yeast:
1275 Thames Valley Ale -or- 1028 London Ale
Ideal pitching rate: 235 billion cells. Ferment Temp: 64-68 ̊F

A lot people come into the shop and ask us “what are you guys brewing” Good question.
So this is whats on deck for this week. 2 gallon batch. O.G 1.068-70
Stone ground:
3 Lb. Perle 2-row
10 Oz. Cara Amber
3 Oz. Cara Pils
2 Oz. flaked oats
1 Oz. Carafa 2

Hops, Horizon (home grown and thanks Jerome!) for the boil and finnish. I don’t have a clue of how much and what will be in the middle and end. Just going to wing it.
