Helped my good friends from Île Sauvage Brewing Co. in Victoria, BC load a truck full of barrels from Novelty Hill-Januik Winery to get them started on their sour program. Keep an eye out for these guys. They're about to flip the script!

Stepping up a Brettanomyces starter for a collaboration with one of our favorite breweries. This will eventually be grown into a big enough pitch for almost 20 wine and gin barrels!

Anyone care to venture a guess who we are brewing with?

We had a f**king delicious beer dinner last night, which we organized for some of our closest friends.
This pairing was no exception!
Food: Seared scallop straddled with ahi tuna atop pickled fennel, radish, crispy quinoa, and dill vinaigrette
Beer: Fig Monger, a Pacific Northweisse with figs grown in the garden where the meal took place

I get really handsy when I start talking about Lambic and Gueuze!
Thanks for all those who came out to last night's lecture.
Catch me talking about beer again next Wednesday night at TeKu Tavern
If you're lucky, I might bust out my Wacky Waving Inflatable Arm-Flailing Tubeman impression again!

The name Totem Fermentation came from a love of all things fermented, the community we come from, and the community we are trying to create.
Totem Fermentation encapsulated our brewing and fermenting at home. We have great ambitions for 2017 that include a rebranding and refocusing of who we are and what we do.
You haven't seen the last of the name Totem Fermentation, but it is with great excitement that we introduce you to our new face: The Wood Beer Project.

We spent the first day of the year bottling some of our favorite beers we made in the last. We look forward to sharing!
