Farewell, Burlington! Our incredible team got a workout loading up this box truck to the brim yesterday with all of our equipment and, you guessed it, hundreds of pounds of salumi! ♥️🐖 Skagit Valley will always be dear in our hearts, but off to the big city for new things! This pancetta arrotolata from a hazelnut finished hog will get your motor running! This gorgeous belly aged 10 months!

Faint herbaceous flavor profile from the pastured pork fat - this stuff melts like butter on the palette. Cured with red wine, black pepper, fennel, and juniper berries.

Typically pancetta arrotolata is not utilized for cooking - you just eat this wonderful Salumi crudo.

It's seen better days, but I stumbled on this going through old notes and keepsakes..

Monsieur Bocuse was pretty *retired* at that point (2008) but still lived in a house attached to his eponymous Michelin 3 star restaurant in Lyon, France. My father and I were the only table in the restaurant for our timed seating, and perhaps the greatest chef of all history was kind enough to give a young cook a tour of his kitchen in depth, in one of the kindest moments of my career. We did the menu classique and it changed my life forever.

The stories about this man aren't exaggerated, he was the real deal.

Like everyone right now, we are confused, scared, and angry.

Norcino is a small production company and our staff have bills - we can't afford to skip a production day - but we have donated already to the Northwest Immigrant Rights Project, and a portion of our sales from this week will go to restaurants in Minnesota that are hurting. It's not much, but we are trying to do our part.

Half our staff are immigrants so we feel this one deeply. Stay safe folks.

Out of 1000+ entries nationwide, our Porcini & Sage salami was chosen as a Finalist for 2026!!! We are over the moon. Recognition is an important part of the recipe - it drives us forward and pushes us to continue our mission of Old World, PNW Salumi, fatto al mano.
