Removing the majority of variables that can impact crops in a traditional outdoor setting goes a long way. Monitoring and controlling growing conditions for plants means consistency in flavor, texture, color, size, shelf life and nutritional profile.

These are critical factors in maintaining a successful operation, whether nonprofit or for profit. Sutton’s Vertical Gardens, located outside Halifax, Nova Scotia, uses a FarmBox Foods container farm to supply fresh, locally grown lettuces to restaurants and grocers across the region. Motivated by pandemic-era produce shortages and rising costs, Kris and Brenda Sutton turned to vertical farming to ensure food quality, consistency and independence from supply chain disruptions. The fully insulated, climate-controlled farm enables year-round production and delivers nutrient-dense greens just days after harvest, meeting wholesale demand for superior freshness.

FarmBox Foods’ technology stood out for its efficiency and low labor requirements compared to competing systems. Within weeks of installation, Sutton’s Vertical Gardens was operational and producing high-quality crops. Since 2022, the container farm has supported the couple’s vision of running a meaningful, sustainable business close to home, while also laying the groundwork for future educational opportunities for local youth.

Cleveland-based Village Family Farms, which operates a Vertical Hydroponic Farm, has long been committed to sustainable farming practices that not only provide nutritious and delicious food to their community, but also promote the health of the land and the environment.

One element of their sustainable farming practices is a focus on hyper local foods. The Village Family Farms team works to grow as much of their own produce as possible (both indoors and outdoors), and when they do need to purchase from other farms, they prioritize those that are located within their region. This helps to reduce the carbon footprint of their food and supports other local farms. Village Family Farms also provides comprehensive workforce development programming.

A lesser-known fact about blue oyster mushrooms: they are actually carnivorous.

While most people think of mushrooms as organisms that simply decompose dead plant material, blue oyster mushrooms in the wild have evolved a fascinating survival strategy. When nitrogen is scarce in their environment, their mycelium (the root-like network beneath the surface) releases tiny toxin droplets that paralyze microscopic roundworms called nematodes. Once immobilized, the mushroom's mycelium penetrates the worm's body and digests it, absorbing valuable nitrogen and nutrients.

Scientists believe this adaptation helps oyster mushrooms thrive on nutrient-poor wood, where carbon is abundant but nitrogen is often limited. In a sense, the mushroom supplements its diet by "hunting" tiny animals.
