Lisa’s one pan mashed potatoes. Yummy! 😋

I use gold potatoes, they are creamer. I peel them, chunk them and add to cold salted water. (Enough full half way a sauce pan, depends on the size how many) Bring to a boil, simmer about 15 min. Drain. Add back to the heat to dry them out. About a minute. Turn the heat off, mash, add butter (🧈 about 3 T.) add warm 1/2&1/2 (about 3/4 cup). Season with salt and pepper.

During the winter, I like to make big batches of things to just re-heat. This zucchini, onion, tomato and potato dish was tasty, filling and easy to reheat in the microwave. Eat it as a vegetarian main dish or a side dish.
2 zucchini, sliced
1 onion, sliced
3 tomatoes, sliced
4 gold potatoes, sliced
1/4 cup olive oil
4 cloves garlic, pressed
1 Tablespoon Italian seasoning
1 teaspoon salt
1/4 teaspoons pepper
Mix all ingredients, add to a 13x9 pan. Cover with foil. Bake at 375 for 40 minutes. (Stir after 20 min).
Remove the foil and bake another 20 minutes or until the potatoes are tender and the liquid has evaporated.
