When it’s cold outside it’s time for soup. Made better with Lou’s Spice Rubs!

Ultimate Veggie Soup

2 broccoli crowns
2 carrots sliced thin
8 Oz mushrooms
8 celery stalks
1-1/2 cups chopped onions
Squeeze garlic
2 red bell peppers chopped
2 32 Oz cartons chicken bone broth or veggie broth
Lou’s Spice Rub HOT!
3 tbsp coconut aminos
Fish sauce
Sriracha
Rice vinegar

I’m loving spicy somewhat sour soups. The sour comes from vinegar. The spice is a combination of hot rub used when sautéing veggies and sriracha to taste.

Sauté the veggies in light olive oil. Start with onion, garlic, carrots, mushrooms, celery, and broccoli. Sprinkle with Lou’s Spice Rub HOT!

Add spinach and kale. Stir and cover. Cook for about 5 minutes until the greens are completely wilted.

Add broth, 3 tbsp coconut aminos, 10 drops fish sauce, 1 tbsp sriracha, 1 tbsp rice vinegar. Taste and adjust spice.

Ladle about half the soup into a blender and purée. Add back to pot, mix, serve. Makes 6 servings. 175 calories per serving.

You can vary the veggies. Add beans for more protein. I like it hot and sour. If you want it less spicy, cut back on the sriracha or eliminate it. The sour is the vinegar. Optional if you don’t like the taste.
