It’s a cowboy candy kind of day. The brine is
2 cups apple cider vinegar, 6 cups sugar, 1/2tsp turmeric, 1/2 tsp celery seed, 3 cloves chopped garlic, 1 tsp cayenne. Mix the brine and bring to a simmer, let simmer for 5 minutes. Add 3 lbs sliced jalapenos and return to boil for another 5 minutes. Spoon jalapenos into hot jars to about the bottom threads of jars, top with brine to 1/2 inch headspace and process in water bath. 15 minutes for pints, 10 minutes for half pints.
3lbs jalapenos makes about 4 pints, or 8 half pints.
The extra brine makes an amazing bbq sauce! Recipe to follow shortly.

Ah cool weather! Restocking the pantry with jam and enjoying canning indoors again. Mixed berry jam, raspberry, blackberry and blueberry. I’m unashamed that I licked the pot clean. 🤣
I used a bag of frozen Costco berries, they’re already mixed so it’s easy.
8 cups of frozen berries, 1/4 cup lemon juice, 7 cups sugar and one box of pectin.
Just dump the berries into a large heavy bottom pot and set burner to medium, stir every 5 minutes or so till they’ve thawed and begin to cook. Mix pectin with 1/4 cup of sugar and set aside. When the berries are nice and warm add pectin and crank burner to almost high, bring mix to a boil and stir often, be sure to not burn the bottom of the pot. After reaching a boil add sugar and lemon juice, stir well, once it begins to hard boil again set timer for 1 minute, remove once done. Add hot jam to hot jars, wipe rims and water bath for 10 minutes.
Today’s haul was 3 bags of Costco berries. 4lbs per bag, I multiplied batches and made 23 pints in all.

best of class aprico/jalapeño dipping sauce. This stuff is amazing, I want to drink it. it’s like sweet and sour with a touch of heat.

1 cup apricots (chopped)
1 cup sugar
1 jalapeno (finely diced) (I used way more because we like heat)
1/2cup white vinegar

INSTRUCTIONS


* Add chopped apricots and sugar to a sauce pan.
1 part apricots to 1 part sugar, easily quadruple
* Heat over medium heat until temperature of sauce reaches 220° F or reaches the gel stage for jam.
* Add jalapenos and vinegar and cook for 5 more minutes, stirring often.
* Remove from heat and add to a heat proof container. Store in refrigerator until use or use right away.
To can, add hot sauce to hot jars, water bath for 15.

Will be similar to syrup consistency unless you cook it down more, we wanted it for dipping.

Pickled red onions. Yummy addition to sandwiches, fish tacos, wraps and burgers.

Makes about 8 half pints or 4 pints.
4 cups vinegar
1 1/3 cups sugar
4 tablespoons pickling salt
Combine in pot and heat to dissolve sugar and salt
Add
3 large red onions thinly sliced. Simmer for about 5 minutes.
While onions are simmering add to each half pint jar (double for pints if preferred)
1/4 teaspoon mustard seed
1 bay leaf
1/4 teaspoon thyme

Shut off onions and remove form heat, allow to cool slightly.
Add onions to each jar, leaving 1 inch headspace. Top onions with brine, leaving 1 inch headspace. Wipe rims, add lids and rings and seal process in water bath for 15 minutes. Time starts when water reaches full rolling boil.

Bison burger soup is one of my all time favorite soups. So simple, full of flavor and made with bone broth. Canning 32 pints today to replenish my grab and go lunches.
Grass fed organic bison burger, potatoes, carrots, celery, onion, tomato sauce, garlic, Italian seasoning, Worcestershire, and bone broth.

15lbs of strawberries freeze dried to 3 half gallon jars and weigh 1lb 1 ounce. Once powdered they all fit into one half gallon jar. Gonna make some super smoothies, and baked goods.
Berries were washed and stems cut, and then processed in the food processor for faster drying. Each freezer bag contains exactly 1lb, 15lbs processed in one load. Each lb of berries ended up as roughly 31 grams.

Yummy mirepoix! Carrots, celery and onions canned together for soup base. 21 quarts in 3 canners, pressure canned in just 40 minutes for quarts. I need more days like this.
For these jars I didn’t quite measure but added equal parts of each ingredient, topped with 1 teaspoon of salt and then filled to 1 inch headspace of water.

Juiced 9lbs of apples and 2lbs of carrots for some really amazing juice. I decided to dry the pulp for later use but then realized I have a ton of sourdough discard to use so now sourdough carrot cupcakes are going. I even found a jar of the pineapple we canned last year to add.
