Happy Earth Day 🌎💚

Sustainability is at the heart of everything we do. From using recycled materials in our stelvins, glassware, and most of our labels, to composting all grape pomace during harvest, we’re always working to reduce our impact. Our solar panels have been soaking up the sun since 2016 and helpgenerate 95% of the energy used across our tasting room, cellar, and distillery, while even powering our EV charging stations.

And it doesn’t stop there. Our distillery’s leftover mash goes to a local farmer at the Savannah Pig Rescue to feed some very happy pigs, and helps create a more circular, waste-free process.

Here’s to raising a glass to the planet today and every day 🌱🍷🥃

The other day John Shaw and his wife stopped by our tasting room - a pretty awesome moment! You may recognize the name, as we have two whiskeys named after farmer John Shaw 🥃

Our John Shaw Bourbon and Rye whiskeys are crafted using a special strain of the Wapsie Valley red dent corn, created and grown by Shaw on his farm located on Cayuga Lake called Heritage Harvesters.

These two whiskeys, along with all of our spirits, help showcase our local New York farmers. It's always nice to see and celebrate the faces behind the grains. Grow local, sip local, support local 👏

This job isn't all glitz and glamour...actually, it's rarely that. Distilling is no easy task, and it can certainly get messy! The other day, Sarah was busy grinding rye to put in the mash tun, some of the first steps in the whiskey process. All of this grain dust will eventually become a smooth, bold rye whiskey in due time. 🥃
