🌿 Herbaceous Garden Rice Salad 🌿
We just wrapped up at the Amqui Station Farmers Market - Madison, TN and couldn’t leave without grabbing beautiful peppers and basil from Una Acre Farm Co.
We used Habanada, Aleppo, and Jimmy Nardello peppers. They are sweet, fruity, and perfect for a fresh rice salad. If you can’t find them, use any mix of colorful sweet peppers. Or better yet, stop by Una Acre Farms at the Amqui Farmers Market next Sunday and pick up a few for yourself!
This salad is delicious right away and even better after a few hours in the fridge.
Salad
✨ 2 c. cooked & cooled rice, cooked in water or stock
✨ 2 Habanada peppers, seeded & diced
✨ 1 Aleppo pepper, seeded & diced
✨ 2 to 3 Jimmy Nardello peppers, seeded & diced
✨ ¼ red onion, finely chopped (soak in salted water if desired)
✨ 1 handful cherry tomatoes, halved
✨ 2 Tbsp. fresh basil, chopped
✨ 1 Tbsp. fresh parsley, chopped
Dressing
• ¼ c. white w**e vinegar
• ½ c. extra virgin olive oil
• 1 Tbsp. Herbaceous Garden Blend
• Juice of ½ lime
• ½ tsp. kosher salt
• ½ Tbsp. honey
• 1 garlic clove, halved
• ¼ tsp. crushed red pepper flakes (optional)
Blend everything except the olive oil. Slowly add the olive oil while blending until the dressing is smooth and emulsified.
Toss the rice, peppers, onion, and tomatoes, basil and parsley (or save it at serving time) together. Add the dressing a little at a time until it is coated to your liking.
💚 Thank you to everyone who stopped by our booth today, and thank you to Una Acre Farms for growing such beautiful produce. Supporting local farmers never goes out of season!
