Our coolers are packed!
The fall season is an extremely busy time here at Eickman’s. Why? Fall is a popular time for cattle processing! Some factors:
🥩Stocking up! Many families filling their home with food before winter begins
🚜 Winter feeding! Farmers have to consider feeding their cattle during the winter weather. Due to this, many animals come during the fall to be processed.
🐄 Cattle are ready! Due to when cattle tend to be born along with needing to be raised for 14-18 months also tends to make October a busy month for Eickman’s.
This means that there are full coolers, freezers, and retail cases, and plenty of meat to choose from.
Stop on in and see what we have in store, whether you’re filling your freezer or just finding something good for dinner!

We will be closed on Monday, September 7th in honor of Labor Day. All other days we will be open our usual hours (M-F 7am-5:30pm, Sat 8am-noon).

Last week we attended the American Association of Meat Processor's largest annual convention, this time taking place in Milwaukee, Wisconsin. This convention is always a great time and a good opportunity to share ideas, learn from others, and meet others in the meat industry. Over the course of a few days, there were several different meetings, classes, demonstrations, tours, and other events, such as the trade show and the American Cured Meats Competition. We were inspired with new ideas, so stay tuned for new products! We're already looking forward to next year's convention in Lexington, Kentucky!

Father's Day is this weekend!
We have so many great gift options, and here is one is the stars: the Bone-In (clearly) Tomahawk Ribeye Steak. These beasts are phenomenal and serve multiple people, (they're the size of a roast). We also have many other cuts, seasonings, meat thermometers, gift certificates and much more!

Reminder: Eickman's will be closed on Memorial Day, Monday, May 25th.

We have a new batch of rabbit in!
Besides our amazing hams and other special items, we also have whole rabbits processed right here in Illinois for $12.00/lb.
(Just maybe don't tell the Easter Bunny... 🐰😬😉)

We have plenty of our Award-Winning Sugar Cured Hickory Smoked Bone-in Hams in the store! Stop in and take a look, or give us a call to reserve one!
We're here 7am-5:30pm M-F, 8am-noon on Saturdays.

Need more info? Keep reading for some tips:

*When choosing the size we recommend allowing 3/4 lb. - 1 lb. per person. Of course feel free to alter this depending on how much leftover you want, the appetites of guests, etc.

*This is not a water added ham like what you would find in many other stores. Because of this, please follow the directions (included with a spice packet) so it's not overcooked. We recommend low and slow cooking. If you heat it quickly at a high heat it could make it drier and very salty as the moisture evaporates.
Also due to this we do not have spiral sliced, just our regular bone-in ham that you can get either as a whole ham or a half ham.

Attn: Farmers!
We have been working hard and have expanded our slaughter capacity for the next few months. At this time we have openings for cattle available in February, March and April 2026. We will continue to keep working toward more openings in the future!
To get on the schedule, just give us a call.
