dian community in the U.S., who longed for the flavors of their homeland but faced the obstacles of inaccessible ingredients and a lack of time to produce the labor-intensive dishes. Furthermore, these Indian expats were highly health conscious and required Indian cuisine that was not only authentic in taste, but also healthy in its preparation. In response, Jyoti developed vegetarian recipes that used only fresh ingredients, limited fat and salt quantities, and involved no preservatives. These products were made available to the marketplace as canned heat-and-serve products and were among the first Indian products that were available nationally in the U.S.
