A key challenge in the production of beer is the diminishing microbial diversity utilized as starter cultures, leading to decreased product uniqueness and sensory complexity, largely attributed to industrial-scale processes that emphasize efficiency, predictability, and standardization at the expense of regionally adapted, naturally diverse microbes.

We try to incorporate local microbes in a lot of beers. Whether appreciated or not, we love to play around and discover what the what the pioneers were brewing/drinking here in 1875, which was the first recorded grain harvest in Eagle Rock (Idaho Falls) area.

We indulged in a variety of beer, cider, mead, wine, sourdough, and artisanal cheese from local artisans across the metropolitan area, and it was a pleasure meeting these skilled craftspeople. We had a great time and learned that fermentation is still a thriving tradition in our community. We tasted remarkable meads, ales, and wines today. It was a truly exceptional day. Thank you to all who attended, especially Build Your Own Brews We hope to host a similar event in May.
