Cebuano Pinakbet is a simple, hearty Filipino vegetable dish made with fresh garden vegetables such as eggplant, bitter melon (ampalaya), squash, and long beans (sitaw), simmered together with savory pork.

One Year Later…
Facebook memories brought this up today, and I honestly can’t believe it’s already been a year.
A year ago, our family was going through one of the most challenging seasons of our lives. My husband was in treatment for almost two months, and everything felt so heavy. I was trying to manage the house, take care of James, and keep our small business going while worrying about my husband every single day.

Today, I can say that he is doing better. He is still adjusting, and there are still difficult moments, but he is doing his best every day. And for that, I am truly grateful.

I also want to take this opportunity to say THANK YOU to our community and to all my loyal customers who stood by us during that very difficult time.

Many of you supported our fundraiser while my husband was in treatment. You helped us keep our business going and helped us get through our household expenses when I was carrying so much on my own. I will never forget that kindness and support. You didn't just support my food—you supported our family.

Every year, I usually have a Customer Appreciation Day with our Filipino community. But this year, I want to open it up to ALL of you.

📅 September 26, 2026 — Customer Appreciation Day
Come celebrate with us! You are welcome to bring any dish you'd like to share, and I will be providing Filipino food for everyone.
It will also be a late birthday celebration for my husband, so this gathering will be extra special for our family.

After everything we went through last year, being able to celebrate together—with the people who supported us when we needed it most—means more to me than I can explain.

Chicken Tinola for dinner tonight
I’m using fresh ingredients from my garden—moringa (malunggay), pepper leaves, upo, tomatoes, and lemongrass.
For the chicken, I like using Tyson Cornish chicken for my Tinola because the flavor and texture are pretty close to the native chicken we have back home in the Philippines.
Nothing fancy—just a comforting bowl of Tinola made with fresh ingredients. Perfect for dinner!

Korean Sweet Pepper Stuffed with Jalapeño Lumpia Mixture!
Wow… just making these took me TWO HOURS!
First, I had to clean each Korean sweet pepper and remove all the seeds, then stuff them with my Jalapeño Lumpia mixture and carefully wrap each one.
And here’s a little trick I do! 👇
✂️ I cut the end of the lumpia wrapper after wrapping. The lumpia is still whole and wrapped—I'm just opening the end slightly.

This actually serves two purposes:
✨ It allows the oil to drain out so the lumpia doesn’t become soggy

✨ More importantly, because the whole pepper is quite thick, cutting the end helps the stuffed Lumpia cook faster and more evenly all the way through.

So much work goes into each one, but hopefully it will be SO worth it when they come out crispy and delicious! 🤤

I have a private event this Saturday, August 29, so I’ll be busy preparing for that. If I still have plenty of lumpia left after the event, I may set up at The Heron in Belfair on Sunday!

Looking for CCTV Camera Recommendations

Hi everyone! I’m looking for recommendations for a CCTV/security camera system for our food trailer, especially for overnight parking.

Ideally, I’m looking for something that:

- Works well overnight
- Has good night vision
- Can record continuously or detect movement
- Has remote viewing from a phone
- Works with limited/no Wi-Fi if possible
- Is reliable for a food trailer

If you have a camera system that you use for your food truck/trailer and love it, please share the brand/model and your experience! Thank you!

Now that James is back to school we are planning to leave our trailer overnight at the Heron so its less work for setup.. Hoping the electricity hookup at the heron will be workout soon to save us some gas.
