Ribeye or Rib Steak?

The main difference between a rib steak and a ribeye is that a rib steak is bone-in, while a ribeye is boneless. A rib steak retains the rib bone and extra fat. A ribeye has the bone and outer fat "lip" trimmed away entirely. Which do you prefer? This feedback helps us when we restock the retail freezer to offer the cuts you most prefer.

Join the waitlist to be notified when our ground beef is available. I am expecting it to be around the beginning of October. It will be awhile before we process for individual packages again and have sold out of beef shares for spring of 2027. So stock up while you can!

Sometimes I feel like I am living in the wrong era and I belong back in the day when the west was wild cattle went to town on trains or on a cattle drive. Back then tallow was a staple for so many things. I have always been absolutely fascinated by cattle history and I could stare for hours at old photos of the Kansas City or Union Stockyards just imagining what life was like then.

At the beginning of the Industrial Revolution think late 1700s to early 1800s, there was a massive demand shift for tallow due to the growth of industries like candle-making and soap-making. These industries relied heavily on animal fats, during the expansion of meat production it created more animal byproducts like tallow. During the early 1800s, when cities grew rapidly due to industrialization, tallow candles were essential for lighting in homes, factories, and public spaces.

Tallow’s use declined in the late 1800s.
However, as the Industrial Revolution progressed, new inventions and materials emerged that gradually reduced the demand for tallow.

Fast forward to the 1900s, and we see a dramatic shift away from animal-based fats like tallow. With the rise of synthetic alternatives, tallow's popularity diminished in everyday life. People were increasingly turning to vegetable oils and synthetic chemicals for both household and industrial uses.

After years of being overshadowed by synthetic materials, tallow is making a huge comeback. In recent years, people have started to rediscover its amazing natural benefits and sustainable properties. Tallow is once again being used in high-quality soaps, skincare products, candles, and even cooking, all thanks to its rich, nourishing properties and eco-friendly nature.

I think sometimes we forget how beef & tallow was sold orginally in those small mom and pop butcher shops and how close some of us are trying to get back to that original model before the industrial age took over.

Most people know that higher prices are going to be attached to those higher graded cuts.
But are you familiar with the term no roll?
"No roll" beef means the meat has not passed through the official USDA quality grading process but is still safe to eat. The name comes from the physical purple ink roller used by inspectors to repeatedly stamp grades like "USDA Choice" or "USDA Prime" down the length of a beef carcass. If a packer skips this optional process, no grade is rolled onto the carcass. Sometimes no-rolls can still fabricate a decent steak but sometimes the meat is better suited as canned meat. ⚖️
