One of the most important steps in our process happens before the syrup is ever boiled.

In this video, Pa explains how our reverse osmosis machine separates the permeate (water) from the concentrate (sap with a higher sugar content).

By removing a portion of the water before boiling, we can spend less time evaporating and more time preserving what makes Bigleaf maple syrup so special.

It's one of many ways we work smarter, honor the resource, and make the most of each season.

Before the bottles reach the table… before the markets open… before most people are even awake… there’s already work being done 😊🍁

Early mornings in the cold.
Walking the land.
Checking the trees.
Paying attention to the rhythms of nature season by season.

A lot of what goes into small family businesses happens quietly… through consistency, care, long days, and a deep respect for the process.

What we do has never just been about making syrup. It’s about stewardship, legacy, and creating something meaningful that can be shared with others.

Around 2,500 trees tapped…and another season came to a close. 🍁

This last season wrapped up earlier than we expected. Every year brings something a little different, and nature always has a way of keeping us learning, adapting, and paying attention.
