Skyler Loftesness, a former health care manager from Eugene, Oregon, never thought she would start her own business. That changed 10 years ago when she was diagnosed with celiac disease and began experimenting with baking her own gluten-free bread. After years of health struggles, her doctor told her there was nothing more she could do.
Instead of doing nothing, Loftesness went back to school to earn a master’s degree in holistic nutrition, where she studied how food could be used as medicine. After seeing how few gluten-free options were available in traditional stores, Loftesness was motivated to help others experiencing struggles similar to her own.
Her creations became popular among people she knew with similar health challenges, and she began gifting and selling her products at events. As the business grew, she met her business partner, Jonathan Fox, a chef who has a family member with celiac, and the brand “Under the Pines” was officially registered in 2023. Now, the duo — sometimes with help from their partners and friends — spend their weeks baking in their kitchen in Salem, Oregon, and their weekends selling at farmers markets across the Portland metro area.
