Growing up, catfish courtbouillion was a treat we only got a few times a year.

My dad supported our family as a commercial fisherman. He ran trotlines for catfish and sold what he caught to folks who came by the house, a few little stores, and seafood lots. Back then he was getting about $1 a pound for catfish filets. Crazy to even think about now.

But the really big catfish were different.

Nobody wanted the filets off those 50-60 lb fish. They were too big and too thick for what most people wanted. So every now and then Dad would keep one.

And that meant one thing at our house…

Catfish Courtbouillion.

Those big thick filets were perfect for cutting into chunks and letting them cook down in that gravy. Dad would make a big ol pot, and we’d eat ourselves silly off that thing for days. 😂

This recipe here is actually my father-in-law’s. When they come visit, he’s usually the one cooking it at the house. Emma got a craving for some, so this time we knocked it out ourselves.

I don’t know if mine would hold a candle to my dad’s or my father-in-law’s…

But sitting around the kitchen table eating it gives me a chance to tell my girls the stories about their Pawpaw. About him fishing for a living. About those trotlines. About people coming to the house to buy fish. About those giant catfish nobody else wanted that somehow turned into one of my favorite meals growing up.

And somewhere along the way, a bowl of catfish courtbouillion becomes more than just supper.

It’s a chance to keep telling my dad’s stories around the kitchen table.

And that’s better than anything in the world. ❤️
