Fluffy Whipped Blueberry Butter
This sweet, fruity, and fluffy blueberry butter is absolutely dreamy! Inspired by the Pioneer Woman, it’s perfect slathered on warm biscuits, pancakes, toast, scones, or even swirled into oatmeal. It’s like a little taste of summer any time of year.
Ingredients
- 1 cup fresh or frozen blueberries
- ½ cup sugar
- ¼ cup butter, cubed
- 1 teaspoon lemon juice
- ¼ teaspoon vanilla extract
Instructions
1. In a small saucepan, combine the blueberries, sugar, cubed butter, lemon juice, and vanilla extract.
2. Simmer over medium heat for 10–15 minutes, stirring occasionally, until the blueberries burst and the mixture thickens slightly.
3. Remove from heat and blend until smooth using an immersion blender or regular blender.
4. Transfer to a bowl and chill in the refrigerator for about 30 minutes.
5. Once cooled, whip the mixture with an electric mixer on medium-high speed until light and fluffy (about 2–3 minutes).
Storage
Store in an airtight container in the refrigerator for up to 2 weeks. Bring to room temperature before serving for the best spreadable texture.
