Hello, all! My first batch of truffles shipped out early this morning. The summer blacks are not the highest quality truffle, but you can’t beat the price. If you’re interested in getting your feet wet in the truffle world, message me and you can get your hands on some of these beauties. I’m letting them go for $25/oz. It was so good seeing my friend Dan again today at the Falls Park Farmers Market! I’ve known the owner of Dakota Mushrooms & Microgreens for a long time, so it was fun catching up while checking out everything they had.

Of course, I had to try the fried oyster mushrooms with cheese dip and they were so good! 🍄 They were definitely a hit because everywhere I looked, people were walking around the market with a basket of them.

If you’re at the Falls Park Farmers Market, make sure you stop by their booth. They have incredible gourmet mushrooms, fresh microgreens, and those fried oyster mushrooms are worth trying!

We just harvested a nice flush of beech mushrooms. Just in time for the 4th! These are highly sought after, but hard to find because they are much more difficult to grow on a commercial scale. Unfortunately, the instrumentation at SDSU’s food safety lab is experiencing some interference from the high alcohol content. They found a reference lab that uses a different methodology more suited for these samples. Hopefully I will get some results back next week! Cheers, and Happy Mother’s Day weekend!

I decided the consistency of these extracts were a little too thick when using one pound per bottle. I’m going to cut the amount in half, along with the price. Also, the SDSU food safety lab wants me to add more alcohol to get the water activity down to 0.83. Right now I’m sitting at 0.87. This will take another week to make fresh batches and have it tested, unfortunately. We will still have some lions mane powder extract available this weekend! Cheers
