🍋 Say Cheese is back...and she brought lemons. 🍋

You asked for it. The Say Cheese series — one of the most beloved things to ever come out of this taproom — returns this Friday, and we are coming in hot.

Lemon Say Cheese is a lemon cheesecake sour ale that hits like a dessert and drinks like a dream. The lemon charges in first, electric and mouth-watering, waking up every single taste bud you have. Then the cheesecake takes over — velvety, rich, and indulgently creamy — turning the whole experience into something you'll be thinking about long after the glass is empty.

At 5% ABV it's the kind of beer you can justify on a Friday afternoon. Or a Saturday morning. We're not judging.

The Say Cheese series has never missed. Not once. This is not the time to start sitting on the sidelines.

We're starting a book club, and the name means exactly what it says.

Banned & Brewed alternates between two kinds of books. Banned — the ones someone decided other people shouldn't have access to, for reasons ranging from genuinely difficult subject matter to reasons that don't hold up under any real scrutiny... and Brewed — fiction and nonfiction steeped in beer, breweries, and pub life, the world this place lives inside of every day. Every other meeting swings between them, so the club never settles into just one mood.

We're launching during Banned Books Week, which made the first meeting an easy call. Our opening book is Nineteen Minutes by Jodi Picoult — one of the most frequently challenged novels of the last two decades, and one that earns every bit of that attention.

Join us October 8 at 6PM. Read ahead if you can. Come regardless if you can't — the conversation's the whole point.

🫐 This one's for the sour heads. The ones who lean in when it puckers.

Vanilla BBC is back — one of our originals, and the one that started a lot of conversations about what a sour ale is actually supposed to taste like.

Boysenberry. Black currant. Real tartness that hits you exactly the way it's supposed to. This isn't a smoothie with a beer label on it. This is a properly sour ale built on dark, complex fruit — the deep, jammy funk of black currant, the rich, almost wine-like depth of boysenberry — and then, right at the finish, vanilla. Not as a sweetener. As a spice. A quiet, warm note that rounds out everything without softening the edge.

5% ABV. Limited release. On tap and in cans starting this Friday.

🍺 A bittersweet one today, friends.

This Thursday is Dan's last shift behind the bar at Covert Artisan Ales.

Dan came to us as part of our reopening, and honestly? We couldn't have done it without him. He showed up, learned the beers, learned the people, and became exactly the kind of face you want greeting you when you walk through the door. He's been a big part of what makes this place feel like home.

He's heading back to Utah, which we're choosing not to take personally.

(We're taking it a little personally.)

If you've been served by Dan, you know. If you haven't had the chance — Thursday is your last shot. Come in, grab a pint, and send him off right.

Dan, you've been one of the good ones. Covert won't be the same without you. Utah better appreciate what they're getting. 🥺

Something's brewing at Covert today — literally.

We've teamed up with our buddy Logan over at Drekker Brewing Co. for round two. Last time it was Sweet Like Death, our wild ale collab that still gets talked about at the bar. This time it's a hazy, juicy IPA loaded with Skyfarm mango terpenes, Freestyle Nelson and Nectaron hops, and Kohia Nelson hop kief — our first IPA collab with Drekker.

Its name: Voices in My Head. Ready in a few weeks.
Come by the taproom tonight — we might not have it in glasses yet, but we've got the story, the hops, and plenty of reasons to celebrate.

🍺 Introducing Covert Pilz.

We don't do things the easy way around here. Never have.

Most modern breweries skip decoction mashing because it adds hours to the process and requires pulling portions of the mash out, boiling them separately, and adding them back — over and over — to coax out flavors you simply cannot get any other way. Richer malt. Fuller body. A depth that shortcuts just can't replicate.

We did it anyway.

Covert Pilz is a single-decocted Bohemian-style Czech Pilsner brewed the old way, with intention. The result is a beer with a beautiful floral nose, bready malt character, and a crisp, clean finish that'll make you wonder why you ever settled for anything less from a lager.

Golden. Clear. Proper. 🌾

This is the pilsner for people who think pilsners are boring. It isn't.

The people have spoken. And spoken. And then spoken again, with increasing creative flair that we won't repeat in a public forum. The cans are here now so everyone can calm down. 😄

De Lime in De Coconut is back — and this time, in cans.

We took key lime and coconut and brewed them into a gluten-free beer so smooth, so creamy, so perfectly balanced between tart and sweet that people apparently lose all sense of social decorum waiting for it to come back around. We used real cream of coconut for a richness you'll feel in every sip. The key lime brings just enough pucker to keep things interesting. The rest is pure, unapologetic tropical bliss.

🕵️ And here's where it gets interesting. De Lime in De Coconut isn't just a standalone. We mix it with several other beers on our menu in combinations so good we haven't exactly put them on the official menu. Call it an off-menu situation. Call it a Covert operation. Ask your bartender. They know things.

🌀 Double Barrel Bon is back. And she brought cans. 🌀

Some beers are made for summer. This one answers to no season.

Double Barrel Bon is an imperial pastry stout that doesn't ask for your permission. Cinnamon. Cream cheese frosting. Vanilla. The moment it hits your lips you're standing in a kitchen on a Sunday morning wondering why you ever drank anything else.

And then the barrels speak up.

Bourbon rolls in slow and warm, wrapping the whole thing in caramel richness and a sweetness that coats every corner of your mouth. Then the rye leans in with just enough spice to remind you this isn't dessert — it's a 13% double barrel imperial stout that happens to taste like the best thing you've ever eaten.

This is not a stand-around-and-scroll beer. This is a sit-down-say-nothing-for-a-full-minute beer. It demands your attention and your comfiest chair.
