THIS IS THE WOODSMAN WAY. 🍄🌲

Yesterday we traded the kitchen for the forest and took the crew west for a little team forage—and some recon for our upcoming Forage to Table dinner with Wanderlust Tours .

For a few on the team, this was their first time learning how to hunt the infamous golden chanterelle. How to read the forest. Where to look. What trees matter. What ground matters. And that moment when your eyes finally adjust and suddenly… you start seeing gold everywhere.

And man, did the woods deliver.

Basket after basket of beautiful golden chanterelles, a couple boletes, and plenty of other incredible fungi to stop, study, identify and learn from along the way. 🍄

But days like this are about so much more than filling a basket.

This is what Luckey’s Woodsman is all about.

Bridging the divide between outdoor recreation and professional food service.

Getting our cooks out of the kitchen and connected to the ingredients, places and ecosystems that inspire our food. Teaching each other something new. Getting our hands dirty. Laughing in the woods. Recharging the batteries.

Then bringing all of that back to the kitchen and eventually to your plate.

Forest → Kitchen → Table.

That’s the Woodsman way.

And judging by yesterday’s haul… our Forage to Table dinner later this month is going to be a damn good one. 🔥🍄🌲

Come with me as we serve the first course. 🌲🔥

Tonight we got to set the table right on the beach and do one of the things that sits at the heart of why I started Luckey’s Woodsman.

I talk about it a little in this video, but my mission has always been to help bridge the gap between outdoor recreation and professional food service.

I grew up with a restaurant legacy in my family that started back in 1956, and when I brought Luckey’s Woodsman back, I wanted to carry that legacy forward — but also make it my own.

For me, that means taking the level of food and service you’d expect from a restaurant and figuring out how to bring it out here.

Tonight’s first course was one of my favorites: our charred curry squash bisque. Warm, a little spicy, and pretty damn fitting when you’re sitting on a beach in Central Oregon as the temperature starts dropping.

A beautiful place. A table full of people. Professional food and service in a setting where you wouldn’t necessarily expect it.

Dinner tastes better out here. 🏔️🍝

Last night we traded the dining room for the lakeshore and served a three-course dinner with one hell of a view with Wanderlust Tours taking our guests stargazing in canoes after.

🍝 Lakeside carbonara with pasta made fresh by hand

There’s something pretty special about cooking a meal from scratch, carrying it down the beach, and serving it at a table with the Cascades doing their thing in the background.

This is the side of Luckey’s Woodsman we love most — bringing restaurant-quality food into the places we’d rather be anyway.

Adventure More. Eat Better. Dream Big.

We’re making a little more room for what matters.

For the next couple of months, Luckey’s Woodsman will be closed Mondays + Tuesdays.

September is bringing something pretty special for our family as we get ready to welcome our baby girl, and after a very full season, we’re creating a little more space to prepare for home.

These extra days will also give our crew time to rest, reset, and come back sharper — with more time to prep intentionally and keep the quality of what we put on the plate where it should be.

We’ve always believed hospitality shouldn’t come at the expense of the people providing it. Sometimes taking care of the work means taking care of the people behind it.

For now, you can find us Wednesday–Sunday, rested, ready, and grateful to feed you.

90s kids… you already know. 🌮🍫🍦

The Choco Taco was one of my all-time favorite desserts growing up. When they discontinued it a few years back, I was legitimately bummed.

So naturally, I started making my own.

And the more I think about it… is there a more outdoorsy dessert than a Choco Taco?!

No plate. No fork. Grab it with one hand and crush it after a day on the trail, river, mountain or wherever your adventure took you.

Our version gets dipped in 60% cacao chocolate and then things get fun — crushed M&M’s, pistachios, coconut flakes and whatever else we decide to throw at them.

Which brings me to the important question:

CENTRAL OREGON — SHOULD WE PUT CHOCO TACOS ON THE MENU?!
