Next up on our apprenticeship intros: Desi!
My name is Desi Clark and I was born and raised in the great state of Maine. I’ve been in Central Oregon for almost ten years and I’m happy to say, this now my home away from home. I’ve built a career as a somatic bodyworker that also loves to spend my time connecting my body with the earth, usually around water or barefoot!
I unexpectedly fell in love with Mckenzie Canyon while searching for land to purchase. I regularly visit the local canyon for birding. In my birding quest, I found Rainshadow and knew it was something incredibly special. This whole experience warms my heart- working in close connection with the earth, surrounded by driven community members, and caretaking sustainable, organic food sources.
This summer you’ll find me smoking all of Rainshadows meat cuts on my Recteq smoker! I love the summer classic sides- homemade pasta salads, roasted potatoes, fresh greens. Keep it local, keep it simple. I’m a meat and potatoes kind of gal.
If all of the vegetables turned into eligible suitors, which would be most appealing to date or befriend, and why?
Vegetables, who eats vegetables? Ribeye is my option. Consistently delicious, a dependable cut, quick to cook and deeply satisfying. I’m looking for the juicy, generous marble! I want tenderness, depth in flavor, and a little grease and gristle.
Choosing to step back into my love of raising and growing food isn’t just about a summer apprenticeship, this is about connecting with a deeply ingrained way of life. My heart has been aching to return.
