A little secret from behind the bar.⁠

When working with egg whites, never crack them directly into your cocktail shaker. Our bartender, Jacob, prefers to use the second tin first, just in case the yolk decides to drop in.⁠
⁠
If it does, no harm done. Discard the egg, grab another, and your cocktail remains untouched.⁠
⁠
This simple trick that can save a great drink from becoming a disappointing one.⁠
⁠
