Sometimes the hardest part of roasting coffee is the waiting. After I roasted these lovely beans, I knew I would have to wait at least two days to try them! Why? Because of off-gassing.

Right after roasting, coffee beans have gasses like carbon dioxide built up inside. If they are brewed before this gas has time to be released, it can make your coffee taste off.

But in a few days I will happily enjoy this Ugandan coffee, which already smells amazing!
