Cranberry Jello Salad with Cream Cheese Topping
Ingredients
For the Cranberry Jello Layer:
2 (3-ounce) packages cherry, raspberry, or cranberry Jell-O
1 1/2 cups boiling water
20 ounces crushed pineapple (with juice, undrained)
1 can (14–16 ounces) whole berry cranberry sauce
1/2 cup chopped pecans or walnuts (optional)
For the Cream Cheese Topping:
8 ounces cream cheese, softened
1 cup sour cream (or whipped topping for a lighter version)
1/4 cup granulated sugar
1 teaspoon vanilla extract
Directions
1. In a large mixing bowl, add the Jell-O powder and pour in 1 1/2 cups boiling water. Stir until the gelatin is fully dissolved (about 2 minutes).
2. Stir in the crushed pineapple (with juice) and the cranberry sauce. Mix until well combined — small cranberry chunks are perfectly fine.
3. If you’d like a little crunch, fold in chopped pecans or walnuts.
4. Pour the mixture into a 9x13-inch dish or a large glass bowl. Refrigerate for 4–6 hours, or until completely set.
5. In a medium bowl, beat the cream cheese with a mixer until smooth.
6. Add sour cream, sugar, and vanilla extract, and beat until creamy and fluffy.
7. Once the Jello layer is firm, gently spread the cream cheese mixture evenly on top.
8. Return to the refrigerator for at least 1 hour before serving to set the topping.
9. Cut into squares or spoon into serving dishes. Garnish with extra chopped nuts, fresh cranberries, or a sprig of mint for a festive touch.
