I'm gonna be real with you - one of our most celebrated beers almost never happened. We made a mistake in the fermentation process, and we had to dump a full batch. But summer was coming up on us and we needed a Lager "quickly". That is when we went back to the history books and discovered a Boat Beer.

That's the thing about brewing - and honestly, about building anything worth drinking. The best innovations don't come from following the recipe perfectly. They come from taking a risk, learning when things go sideways, and having the courage to say "wait, let's try this...."
