We just finished up the first ever batch of venison bologna for a very good friend. At his request we did not add any fat. I was worried we wouldn't get proper protein extraction or meat tension. But with several fine grinds we achieved perfect meat emulsification and it is delicious. I'm not a big bologna guy, but I will definitely be making a batch for my family and I to enjoy!

I'm a one man show doing this after my normal 9 to 5 for the past two months I've taken in a lot of deer, most nights I get home around 5 and skin and quarter deer till midnight.

At this point I have to get caught up on processing meat. I don't have time to skin and quarter until I get caught up on some of these deer. If you have them skinned I can take them in and get them in a freezer.

It's been a great year and my family and I have enjoyed serving all of you and we look forward to serving more of you. Merry Christmas and happy New Year!

We will be out of town till next Monday hunting in Missouri. We've been so busy processing everyone else's deer we haven't had a chance to hunt ourselves this year. We will be back Monday evening ready to rip again!

A customer brought us a doe Sunday morning at 11:00am, at 12:47 we had the entire deer b***d out as the customer only requested summer sausage and bratwurst. We had all the meat seasoned and in the fridge to rest overnight and then into the freezer. Tuesday we did a fine grind and added high temp cheddar and stuffed 32lbs over bratwurst and 20lbs of summer sausage.

The summer sausage was hung in our Dry Ager cabinet for 3 weeks to develop the most amazing flavors that nobody else around here can offer.

The bratwurst were hand stuffed into natural sheep casings and smoked low and slow for hours and then vacuum sealed into 2lb. packages. The total delivered to our customer was almost 60lbs of delicious custom meat products off one doe. What would normally have been byproduct or waste was turned into all natural dog food and donated to a local canine breeder.

Welcome to Tomahawk Meats, we process whatever you bring us for friends and family. Domestic pigs, wild hogs, deer, goats, beef etc. Our number one goal is to ensure you get the meat you brought us back, not someone else's gut shot deer that's half rotten.

We pride ourselves in communication. From the time your animal is dropped off, throughout the process, right down to the packaging and delivery.

Our extremely high standards will not mean our services are for everyone, we will not accept a gut shot animal as this can contaminate our processing tools and environment.

We look forward to answering your questions and look forward to serving you and your family with all your meat processing needs.
