**Creamy Potato and Leek Soup 🥣❤️**

Hey friends! This is my go-to comfort food for chilly nights, and it always leaves my family raving. Plus, it’s super easy and makes a ton—perfect for those meal prep days!

**What you'll need:**
- 2 large leeks (white and light green parts only, cleaned and sliced)
- 1.5 lbs (3-4 medium) starchy potatoes (Russet or Yukon Gold), peeled and diced
- 1 medium onion, diced
- 2-3 cloves garlic, minced
- 6 cups low-sodium vegetable broth (or chicken broth for non-vegetarian option)
- 1 cup heavy cream
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 sprigs fresh thyme (or ½ teaspoon dried thyme)
- 1 bay leaf
- Salt and black pepper, to taste
- Fresh parsley and chives for garnish
- Croutons, crispy bacon bits, or grated cheese (optional)

**How to make it:**
1. Slice off the root and dark green tops from the leeks. Rinse the white and light green parts under cold water to remove grit, then slice into thin half-moons.
2. In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add diced onion and sauté for 5-7 mins until softened.
3. Add minced garlic and leeks. Cook for another 8-10 mins until leeks are soft and fragrant.
4. Toss in the diced potatoes, thyme sprigs, and bay leaf. Season with salt and pepper. Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 mins or until potatoes are fork-tender.
5. Remove the bay leaf and thyme. Blend the soup until smooth using an immersion blender, or carefully blend in batches in a regular blender—vent the lid to avoid splatters!
6. Return the pot to low heat and stir in the heavy cream until warmed through. Avoid boiling after adding cream.
7. Serve in bowls and garnish with parsley, chives, croutons, or any other toppings you like!

Enjoy! You’ve got this! Let me know if you give it a try! 😋✨

🧀 No Knead Cheddar Bread in a Dutch Oven! 🤤

Hey friends! This no-knead cheddar bread has quickly become a family favorite in our house! It’s super easy and requires hardly any hands-on time, which is perfect for those busy days when you just want fresh, warm bread without the fuss.

What you'll need:
- All-Purpose Flour: 3 cups
- Lukewarm Water (about 105°F/40°C): 1 1/2 cups
- Instant Yeast: 1 1/4 teaspoons
- Kosher Salt: 1 1/2 teaspoons
- Sharp Cheddar Cheese (shredded): 1 cup
- Flaky Sea Salt: 1/2 teaspoon (for topping)

How to make it:
1. In a large bowl, whisk together the flour, yeast, and kosher salt. Pour in the lukewarm water and mix with a rubber spatula until everything is just combined and forms a shaggy dough. Fold in the shredded cheddar cheese. Cover tightly with plastic wrap and let it rise at room temp for 12 to 18 hours (yep, that long!) until it’s doubled in size and bubbly.

2. After the first rise, lightly flour a work surface and scrape the dough onto it. Fold it over itself a few times to form a rough ball. Cover loosely with plastic wrap or a kitchen towel and let it rest for 30 minutes. While it’s resting, pop a 5- to 6-quart Dutch oven (with the lid) into a cold oven and preheat to 450°F (232°C).

3. Carefully take out the hot Dutch oven. Gently transfer the dough into it (it’ll be a little loose and will deflate). Sprinkle flaky sea salt on top. Cover and place it back in the oven.

4. Bake covered for 30 mins, then take off the lid and bake for another 15-20 mins, or until it’s a gorgeous deep golden brown and the internal temp hits 200–210°F (93–99°C).

It’s that easy! Trust me, your kitchen will smell amazing and everyone will be impressed! Enjoy! 🥖💛
