Elizabeth is back with this delicious and easy recipe : Creamy Summer Squash Soup

Ingredients:
-3 medium summer squash, sliced into half-moons
-1 medium onion, diced
-1 medium potato, peeled and diced
-2 garlic cloves
-4 fresh thyme sprigs, leaves only
-1 tbsp olive or coconut oil
-4 cups bone broth or vegetable stock
-1/2 cup coconut milk
-2 tbsp lemon juice
-Salt and pepper, to taste

Directions:
Warm oil in a large pot over medium heat. Add all the vegetables, herbs & garlic, until the onions begin to soften

Add broth of choice and bring to a boil, then reduce heat and simmer, stirring occasionally, until all the vegetables are soft (about 15-20 minutes)

Let cool slightly and use an immersion blender to puree until smooth

Stir in coconut milk, lemon juice, salt and pepper to taste

Serve with additional fresh herbs and a drizzle of coconut milk, if desired. Enjoy!

The chickens are starting to grow their winter coats! Each year, chickens naturally molt, shedding their old feathers and growing a fresh new set in preparation for the colder months. Molting is triggered largely by the shortening daylight hours in late summer and early fall, which is why we often start seeing it from late August into September. Growing all those new feathers takes a lot of protein and energy, so their bodies shift resources away from producing eggs,and this can mean fewer eggs or even a temporary pause in laying. Once the molt is complete and their new plumage is in, egg production generally begins to pick back up.

Last week we were visited by the on a gorgeous summer day. Their group spread out across the farm and, for a few hours, became part of the landscape as they captured it with ink and paint - as is the way with plein air painting!
We at Spring Creek believe that creating art is an essential part of the human experience, not so different from the practice of tending the land or making a meal 💚
