We are so thrilled that and will be joining us once more for the 2026 Somerville Fermentation Festival!

🍵 is a awarded Spanish Japanese tapas restaurant in Cambridge, MA by chef/owner Tracy Chang. PAGU creates delicious fermented sparkling teas rooted in single origin tea. This means that the tea is sourced from one specific geographic location (aka it is not a blend).

🍄 sells mushrooms! fresh! and other mushroom-related goodies, gifts, and accompaniments. If there’s any mushroom-y item your heart has ever desired, you can probably find it here!

🥒 Let’s Pickle! An Introduction to Lacto-Fermented Vegetables 🥒

Join us for a fermentation workshop at the final gathering of Herbstalk! Since 2012, Herbstalk has brought together New England herbalists, farmers, medicine makers, teachers, healers, and artists who have come together to share their knowledge, craft, passion and products. We’re honored and excited to be part of this beautiful community event!

This beginner-friendly introduction to fermentation will cover the fundamentals of fermenting vegetables. We’ll learn how and why fermentation works, how to keep your ferments safe & when to toss, and the benefits of making and eating fermented foods. You’ll observe the process of making sauerkraut and brined pickles, and leave with a printed recipe for both!

🥬 Learn to Ferment: Make Your Own Sauerkraut 🥬

Please join us for a workshop at First Street Market () for World Environment Day!

Learn the basics of vegetable fermentation & make your own jar of sauerkraut to take home!

This beginner-friendly introduction will cover the fundamentals of fermenting vegetables. You’ll learn how and why fermentation works, how to keep your ferments safe (and when to toss them), and the benefits of making and eating fermented foods. You’ll make and take home your own 1-quart jar of fermenting sauerkraut along with a written recipe for homemade sauerkraut and lacto-fermented pickles.

If you’re curious about fermentation but not sure where to start, this class is definitely for you! Sauerkraut samples will be provided and fermentation questions will be answered.

We’re so happy to welcome and back to the Somerville Fermentation Festival! 😍

🥬 Red Kettle Kimchi makes really good kimchi and Asian ferments born from the soils and seas of Maine. Founded by Ger Liang Tysk, a chef who got her start cooking on sailing ships in the Caribbean, Red Kettle Kimchi is an Asian and woman-owned business bringing fresh Maine ingredients and time-honored Asian fermentation traditions together. We strive to source local Maine produce and ingredients to make our kimchi right here in Belfast.

🌶️ Craic Sauce is a Lowell-based hot sauce company crafting small-batch sauces from locally grown peppers and seasonal farm ingredients. Through fermentation, we turn regional harvests into bold, balanced sauces that celebrate flavor, community, and the farms behind them.
