2026 Verjus SPRITZ of Pinot Noir ~ A Refreshing Sparkling, Non-alcoholic Taste of the Estate.

Ten years into producing Verjus (French for ā€˜green juiceā€™) from our Estate Pinot Noir, we kept returning to one simple way of enjoying it, the Verjus Spritz.

We set about creating this refreshing, sparkling creation. The fruit is picked during veraison, when the resulting juice is perfectly piquant and tart, then carbonated, and bottled right away, prior to fermentation. A non-alcoholic capture of summer vibrancy, itā€™s best enjoyed when the sun is high, and the ice cubes are plentiful.

2026 Verjus of Pinot Noir ~ A Non-alcoholic Kitchen Essential.

Pleasantly tart and delicately floral,Verjus (French for ā€˜green juiceā€™) offers a refreshing, non-alcoholic expression of the SCRIBE Estate.

We harvest our Estate Pinot Noir halfway through veraison, at the peak of summer freshness, before it has accumulated much sugar or color, then cold-press and bottle the juice.

A unique and versatile SCRIBE staple for ten vintages, we use it in place of citrus juice or vinegar for nuanced acidity in the Hacienda Vinaigrette. Even more so, we enjoy it simply in a Verjus Spritz, over ice with a splash of sparkling water, a piquant and unexpected ode to the summer harvest season.
