Berthoud wines are also available to taste and purchase at Mayo Family Winery at 13101 Arnold Dr. Glen Ellen, CA 95442. 707-938-9401 Berthoud Wines (Berthoud is pronounced: BEAR2) are produced and estate bottled in the barn depicted on the label from vines that are meticulously managed to yield less than two tons of small, concentrated grapes per acre. The grapes are punched down by hand several

times each day in traditional open-top redwood vats during fermentation to maximize color and flavor extraction in the gentlest manner possible. A 19th century one-ton basket press delivers only the highest quality wine directly to a combination of premier French oak barrels. After approximately twenty-two months of aging, the wine is bottled without any fining or filtration. The result is handcrafted wine that exudes the personality of the Berthoud family, their property and the artisanal style in which it was made.

In the Spring, we focus on racking the 2023 vintage. This means we are moving wine from each barrel to a tank, washing each barrel throughly, and moving the wine back into the barrels. This allows the wine to be taken off the sediment and lees (dead and inactive yeast cells) at the bottom of the barrel that can impart off flavors in the wine if left too long. Additionally, if the lot is comprised of many barrels, they will be mixed together in the tank creating a more cohesive flavor for aging!

Now we’re turning our focus back to the 2024 vintage in the vineyard.

Did you know the Chasselas Doré varietal originated in Switzerland? Just like the Berthoud family! A common grape there, it is relatively unknown here in the United States. We make our Chasselas to emulate the best of Switzerland-clean, crisp and with just an ever so slight hint of effervescence. We love to pair it with fondue and racelette, or just enjoy glass with friends and family!
