Hey yโ€™allโ€ฆ I know Iโ€™ve been a little quiet lately.

Iโ€™ve been in the hospital dealing with a brain-related health issue that Iโ€™ve been dealing with for a while now.

For anyone who had catering orders or meals scheduled, those have been canceled and refunds sent. I understand some of you may be disappointed, and I sincerely apologize for any inconvenience this has caused.

To those of you who have been understanding, patient, and supportive during this time thank you. It truly means a lot.

The last few weeks Cooking Classes at the Kroc Center of South Bend have been full of learning, creativity, and some amazing food ๐ŸคŽ๐Ÿฅ˜

One week we focused on instructional learning, where participants learned about foodborne illnesses, kitchen safety, and proper food handling, followed by enjoyinga delicious meal I prepared.

Another week was all about hands-on cooking and flavor!

What was created?

โœจ Teens: Homemade KFC Bowls
โœจ Juniors: Loaded Mashed Potatoes
โœจ Adults (Foodies): Sweet Chili Glazed Salmon with Herb Butter-Infused Potatoes

I truly love watching each age group grow more confident in the kitchen while learning real skills they can take home with them. Every class brings laughter, teamwork, creativity, and of courseโ€ฆ great food.

I grew up on this and still make it today. My tomatoes are sweet...butter, sugar, black pepper and herbs just how I like them. Youโ€™ll see this dish with fried pork chops too, and itโ€™s good either way.

Stewed tomatoes over rice with sausage is another home staple. Real comfort food. You should try it!!๐Ÿฅฐ๐Ÿฅฐ

Cooking Classes continued at the Kroc Center of South Bend : Week Four ๐ŸคŽ๐Ÿ–ค

Last week in the kitchen was all about foundations, flavor, and confidence.

What was created?
Theme: Southern Comfort Classics ๐Ÿ˜‹

Juniors:
โ€ข Learned the basics of making deviled eggs from start to finish

Teens:
โ€ข Classic Deviled Eggs
โ€ข Collard Greens

Adults (Foodies):
โ€ข Cajun Garlic Shrimp Deviled Eggs
โ€ข Collard Greens

Every group worked at their own level, learning not just how to cook,but why technique, seasoning, and patience matter. Watching the juniors light up when they mastered a new skill, the teens step into teamwork, and the adults elevate familiar dishes is such a beautiful thing to witness.

This space continues to be about more than food. Itโ€™s about growth, encouragement, and building confidence,one recipe at a time.
