The bok choy has been amazing this year... big crunchy stems and flavorful leaves. In our house, it's usually served as an easy side dish. Chop and saute the white stems with a bit of garlic and/or onion. When the stems are almost done cooking, toss in the leaves (sliced in ribbons). Finish with a splash of tamari or soy sauce.
