Great beef doesn’t start at the butcher counter.
It starts with the animal.
Breed. Genetics. Feed. Environment. Animal care. Time.
Then comes the part most people never see: finishing, processing, aging, trimming, portioning, packaging, cold-chain handling, and everything required to protect quality from pasture to plate.
A 1,300–1,400 lb finished steer doesn’t become 1,300 lbs of beef. Depending on the animal and how it’s processed, the final retail yield can be closer to 600–700 lbs.
That’s why understanding beef means looking beyond the steak in front of you.
Know where it came from.
Know how it was raised.
Know who handled it.
Know your beef. 🥩
This is why you should not buy your animal proteins at the same place you buy your cleaning suppliers.
