Real chili takes patience. No shortcuts, just building flavor layer by layer.

Here is our recipe for a hearty Beef Chili with Beans and Squash. Save this for your next dinner at home.

🥘 The Ingredients:

• Ground beef (80/20 is best for flavor)
• Diced red peppers, Spanish onion, & minced garlic
• Cubed butternut squash (or sweet potato)
• Red kidney beans
• Tomato paste, beef stock, & diced tomatoes
• Cumin, coriander, smoked paprika, salt, pepper, & a hint of cayenne
• Fresh cilantro to finish

👨‍🍳 The Process:

1. Sauté onions and peppers until soft.
2. Add the beef and brown it thoroughly.
3. Stir in tomato paste and garlic. Cook for 2 minutes to build that deep flavor base.
4. Add the squash, beans, stock, and tomatoes. Toss in your spices.
5. Bring to a gentle boil, then drop the heat. Cover and simmer for 30–45 minutes until the squash is tender.
6. Finish with fresh cilantro.

Slow-Cooked & Seared Beef Tongue 🥩🔥

Getting beef tongue right comes down to two things: patience and a hot pan. We simmer it low and slow until it literally melts, then sear it to get a golden, caramelized crust. It takes a little time, but the actual hands-on work is minimal.

Pair with Zina’s Aegean Pasta, Wheatberry Salad, or Black Bean Salad for a bold, balanced plate where the bright, fresh flavors cut right through the rich, savory meat.

Ingredients:

1 whole beef tongue (about 2.5–3.5 lbs)
1 onion
1 carrot
A few bay leaves
Salt
Olive oil
1 fresh rosemary sprig
1 garlic clove, smashed

Instructions:

1️⃣ Simmer – Place the tongue in cold water, bring to a boil, and skim the top. Add veggies and spices. Simmer on low for 3–3.5 hours (or sous-vide at 165°F for 24 hours) until tender.
2️⃣ Shock – Transfer the hot tongue straight into an ice bath for 2 minutes. The skin will peel off in one quick motion.
3️⃣ Slice – Cut the peeled tongue into thick slices (about 1 inch).
4️⃣ Sear – Heat a grill pan with olive oil, smashed garlic, and rosemary until smoking hot. Sear slices for 2 minutes per side until beautifully caramelized.

👨‍🍳 Chef’s Tip: The ice bath is not optional. Try peeling a hot tongue without shocking it first, and you’ll regret it immediately. Do the ice bath, and peel it in seconds.

Perfectly charred grilled octopus served with a rich, spicy dipping sauce. It looks impressive, but starting with pre-cooked tentacles means this restaurant-quality dish is ready in under 10 minutes.

Pair with Zina’s Aegean Pasta Salad for a bold, balanced plate where the bright feta and crisp veggies cut right through the smoky flavors.

Ingredients:

1 lb pre-cooked octopus tentacles
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
1/2 cup mayonnaise
1-2 tbsp sriracha (or preferred hot sauce)
Fresh lemon juice

Instructions:

1️⃣ Prep – Pat the octopus completely dry with a paper towel. Rub with olive oil, paprika, salt, and pepper.
2️⃣ Mix – In a small bowl, whisk together mayonnaise, sriracha, and a squeeze of fresh lemon juice.
3️⃣ Grill – Heat a grill pan or cast-iron skillet on high until smoking hot. Sear tentacles for 2–3 minutes per side until beautifully charred.
4️⃣ Serve – Plate hot from the pan and serve alongside the spicy dipping sauce.

👨‍🍳 Chef’s Tip: Don’t skip drying the octopus! If it goes into the pan wet, it will steam instead of getting that crispy char.
