Good healthy food doesn't have to be complicated. I do love that all the ingredients except the fresh milled wheat in the tortilla, is all from our farm!

Here's another quick breakfast with prepped tortillas.

Beef bacon, cook slow, leave grease in pan, fry farm eggs, toast kale in cast iron

Added fresh ricotta cheese and garden tomato. Enjoy!!

Early this week, I posted on making up sourdough tortilla shells.

It's an easy go to for a quick snack or meal for our family.

Here's an example of using them.

This morning, not sure what I was going to have for breakfast, I quickly grabbed one and looked around to what I had on the counter.

A fresh garden onion, (a couple slices with some EVOO and into the cast iron), fresh tomatoes, into the skillet, a little shredded zucchini, three whipped eggs, fresh gouda shredded cheese, and a quick frittata was born!

On this one, I used a little Farmhouse Blend Seasoning and sea salt.

Quick, healthy, farm to table & eating in season! My favorite kind of meal!

I love eating in season.

You can too! Even if you do not have a garden, visit a local farmer's market, roadside stand or ask your neighbor who gardens if you can buy, barter or trade for some goodies!

Today, I am making garden sauce. Fresh tomatoes, garlic, onions, herbs, and zucchini.

I started by sautéed burger with a little EVOO.

Because I needed some chicken breast cooked, I am using the steam to cook them above the sauce! 😆

I will cook some fresh pasta and toss with a freshly grated parmesan.

It's a smell good kind of day in the farmhouse as loaves of sourdough are baking, the garden sauce is cooking down, and I just finished the last batches of zucchini relish.

Now to whip up a batch of sourdough zucchini bread (request from Cowboy).

It's canning season!

I thought I would share some fun I had this week.

Maggie Moo brings so much value to our farm.

The milk she provides, our beef as we grow out our calves and of course, the piles and piles of manure that becomes black gold for the garden! 😆

But the very best and funnest (yes, I know that's not really a word) is having the opportunity to create delicious food for my family.

This week, I took 3 gallons of milk - here's the outcome.

1 pound 9 ounces of fresh mozzarella cheese (not comparable to anything you find in the store, even the texture is so different and the flavor - oh my!!!!)

Then using the warm whey, I created whey ricotta cheese - yielded 1 pound 8 ounces. Lasagna is on the menu for Sunday!

Before I started on the cheese, I harvested all the cream I could get! That was almost a half-gallon - yes, from the 3 gallons of milk!!

I proceeded to make butter - yielded 1 pound and 1 ounce of delicious gold!

From making butter, I had a little over a quart of buttermilk. I will use that to create a few sourdough buttermilk biscuits this week.

Whey - 1 1/2 gallons of whey.

I used some today to replace the liquid in sourdough pizza crust.

I used a half gallon to cook down with carrot scraps from canning - this will become chicken food.

I will use it this week in cooking, in my shakes, and to drink after coming in from working outside on a hot day!

No waste.

That's a lot of yummy for 3 gallons of raw milk.

The best part, I get to repeat this again next week!

New baby on the farm!

So a new adventure.

Grafting a calf that needed a mama!!!

Meet Baby Boy.

Our neighbors had a calf the mother did not want.

I mentioned iI was looking for a bottle calf as I need to separate our calves but I am not ready for milk jail.

I had no idea they had one in the Barn!

So, they no longer have to bottle feed and buy milk supplement. I won't be in milk jail. In 6 months or so, send him back home!!!

Win. Win.

Now to find a bottle baby calf for Dollop!

Our Lil farmhouse kitchen was busy last night.

We hosted a dinner with friends that are really family. Lil voices saying "Auntie Jo " makes my heart sing. Asking when the ice cream will be ready and then asking for more ice cream when it was done!❤️

A sit down dinner for 12.

We borrowed a few folding chairs from the neighbors and made amazing memories with some amazing people.

The kids went fishing (catch and release) at our neighbors lake. We had to call them at dark to come home.

A beautiful hot summer night on the farm.

Happy 4th of July.

It is an honor to live in the greatest country in the world!

Happy Birthday America 🇺🇸

We have 2 more mamas sitting on eggs, so hopefully we will get a few more this season.
