We have been spending the last few days getting all our fields ready for the fall. Mowing down warm season cover crops to make way for cool season vegetables. Clipping all the pastures and stockpiling hay.

Although you can’t plow a garden by turning it over in your mind, you can come up with a pretty good game plan.

I’ve been getting all of our equipment dialed in for fall plantings. By ensuring everything is in working order and the spacings are correct, we can drastically cut back on labor and weeding in the field.

Sweet potatoes enjoying a foggy sunrise.

This summer we’ve had no shortage of rain, maybe even too much rain at times. When the gardens stay saturated and it’s too wet to walk in or drive a tractor, the weeds thrive.

There have been brief windows of weeding opportunities usually followed by a torrential downpour.
With tractor cultivation it’s ideal to have a day or two of clear skies and sunshine after a pass with the plows, otherwise the rain has a tendency to replant the freshly unearthed weeds and the cycle continues.

We’ve relied heavily on hand weeding this season and it’s been very enjoyable. No noisy tractors running out of gas mid field, just quiet times with hands in the soil…. And of course the occasional thorn from pigweed.

Eating like a farmer all year round is unbeetable!

Eating seasonally is great, but here at Villa Acres we like to can, freeze, dry, and ferment as much of our food as possible so that we can eat it all year long, even when it isn't coming fresh out of the gardens anymore.

We are canning beets this time of year, and many of you are, too! Thank you to everyone who has put bulk orders of beets in for your pickled beet pleasures! We are grateful to get to feed you now and for the rest of the year 😘

We might be sold out of beets by the next time we see you at the Sparta Green Market on Friday, July 17 from 4-7, but if we are, don't worry, because we will have plenty of other fresh produce and beef for you! 🙌🏽🙏🏽❤️
