They say when you have 10 hot sauces, you probably don’t need an 11th... but when fresh Big Jim green chiles and jalapeños show up from local South Dakota growers, you fire up the roaster and get to work.
​Invested in my own barrel roaster so I could do this on my own terms—smooth texture, zero chunks, and a solid medium bite with real pepper flavor.
​First 2-gallon batch is dropping in a couple of weeks, and I’m sending test samples out to a few loyal taste-testers.

If you can smell this through the screen, you already know. 🌶️ About to blister and roast these green chiles and jalapeños, blend them with tart tomatillos, and bottle up pure fire-roasted goodness for the next Dakota Heat batch. Stay tuned for the cook!

The precise moment the old immersion blender decided it was time to retire 💀🔊 (Sound up if you want to hear it literally crying for help).
​When you're blending up massive batches of heat, your gear takes a beating. I had a feeling it was on its last breath, so thankfully a backup was already on standby, but it's always sad to say goodbye to a kitchen champion.
​The show must go on, and the sauce must keep flowing! 🔥 🌶️
