What about working Smarter?

I'd like to say that I'm doing all three, but all I can say forsure is that I am always doing the best that I can.

This is what the shop looks like two thirds of the way through a production run for us these days. Just a few finishing touches remain on the dome-shaped truffles and then it's all packaging and cleanup...and then we start again at the top!

Today we made a fresh batch of 70% Palenque bars, and the truffles we made yesterday include: Peanut Butter XL, Raspberry, and Cardamom & Hazelnut Fika.

Gotta get back to it!

New Batch in the Shop this Weekend

This week's truffles include:
-Peanut Butter
-Black Sesame (!)
-Cappuccino
-Vanilla Bean
-Peppermint

We also got around to a fresh batch of 70% Palenque bars this morning (available but not pictured here)

Most of the truffles came out well but there were some definite head-scratching failures too. Instead of getting these packaged today we hit the books to troubleshoot and we have some promising ideas to resolve the issues we came across with this batch.

There are so many variables to keep an eye on so it can be very challenging to achieve the consistency we seek. Since moving to our new location we've been running into issues with the ambient humidity, which can really impact our making process.

Yes, our shop is located in an old building.
Yes, it's summertime in Virginia.
So, there's only so much we can do on that front, but we're going to double down on that and make a few more tweaks in the name of progress.

We'd love to begin offering chocolate tasting sessions to give everyone the opportunity to explore the many diverse flavors chocolate can have (depending mainly on where it's from).

Cacao has terroir, like coffee and wine. šŸ«šŸŒ± This means that the growing region and climate have direct effects on the flavor profile of the finished chocolate. It's not just about how much sugar is in there, although that's important too!

Official gameplan coming soon, but this is what we're thinking of now: *?
-Six varieties (primarily dark chocolates)
-Sunday afternoons (2-2:40pm)
-Limited spots (6-8 people)

These hours are likely to shift seasonally as our shop and the greater Marketplace continue to settle into their new forms.

Thereā€™s a decent chance you can catch me here a bit sooner or later, but youā€™ll definitely find me here during those hours!

Normal business hours from 10-6, with the addition of Memorial Day on Monday šŸ’«

Also, it looks like it might be our first weekend open with no rain. šŸ˜ƒ whatā€™s the world coming to when the April showers are delayed by a month!?

Itā€™s going to be a beautiful summer! Big shoutout to anyone wrapping up their school years. Get some rest!!

We have a new workshop and storefront!

Weā€™ve got a variety of dark chocolate bars and truffles ready for you to enjoy, with plenty more on the way!

Located in the back left corner of , weā€™re ready to start serving up our joyous dark chocolate treats in our brand new location!

Weā€™re kicking things off with a bang this weekend to celebrate SperryFest with our local community and everyone else who wants to come see what Rappahanock has to offer.

Thereā€™s so much to explore in Sperryville, and it finally feels good to be outside again! We hope to see you out there.

Our shop will generally be open Fri/Sat/Sunday, from 10-6, plus Monday holidays

This Saturday, weā€™ll be sticking around a bit later than usual for the Ducks After Dark SperryFest afterparty šŸ’«

Swing by and see for yourself all we have to offer! This is a bright beginning and there is so much goodness in store for us all.ā¤ļø
