The wholesale cost for the popular sandwich is only $5 according to Will, but the need to cover operational expenses is what caused the meal that was once $12.99 three years ago, to become $15.99 today.

Will spends $20,000 a month on renting a space that houses one of his restaurants in a "new mixed-use development," arguing it "costs a lot" given the location.

"My utilities [are] $6,000 a month. My labor in December [was] $60,000, which means I've got $86,000 of base cost the day I open the doors on January 1," Will explained.

"You figure in a 32% food cost. I have $11 of gross profit in that sandwich. You take all my costs divided by $11 of gross profit, and I [have] to sell 93,000 sandwiches just to get to zero before I can make any money," he continued.

Tis the season of sharing...

Herb de Provence seasoned Chicken over Parmesan Black Truffle Cream Sauce Fettuccine

Sauce:

1.5 to 2 Tbs ground Almonds (crumb consistency)
2oz Minced Speck (or any other similar Italian cured meat)
1.5 Tbs Unsalted Butter
1.5 tsp Truffle Oil
2 to 3 pints Heavy Cream (allowed to temperature to room temperature)
3 to 4 good size pieces of Parmesan Rinds (size to roughly cover the palm of your hand)
1 tsp Black Truffle Spread (available from higher quality grocery stores like Wegmans, or online)
1/4 to 1/2 Cup (your preference) Grated Parmesan Cheese
1 sprig Fresh Thyme
Fresh Coarse Ground Black Pepper

1) In Dutch oven or deep large fry pan (coated non stick or ceramic) toast Almond on medium heat until just becomes aromatic. Do not walk away and stir constantly. In 5 seconds this step can go from almost done to burnt!!
2) remove from pan and set aside
3) in same pan melt Butter and add Truffle Oil. Blend.
4) Add speck and cook stirring often until pieces are browned and fat has rendered. Return Almonds to pan
5) immediately add heavy cream and stir to evenly encorporate Almonds. Add parmesan rinds and cook, stirring regularly until mixture becomes hot and just begins to bubble lightly, but do not boil!
6) reduce heat to simmer and stir occasionally for 1.5 hours
7) after simmering it should have thickened fairly well. Remove rinds and discard.
8) add Truffle spread, Thyme, and parmesan and continue stirring often for another half hour.
9) remove Thyme stems (leaves should have mostly removed themselves into the sauce), add pepper to desired amount, blend with fresh pasta and enjoy!!
