People....!!!!
When I say we were blessed today.... This is what I'm talking about....!!
I don't know how many of you eat Nopal (cactus) but as a child I loved eating all things my family would make with Nopal.... Today I processed two huge bags of cactus paddles & vacuumed sealed the packages... When I say a process....I mean a long process..If you know the cactus is much like an aloe plant & secretes a goo when cut... So I trim them and peel them to remove the spikes and cut them into chunks...after that I blanch them in hot water for five minutes.. then rinse & agitate under cold water to release & remove as much goo as possible...then we vacuum seal them for later use.
Tonight I made my favorite Nopal & ground meat tacos with marinated Avocados.. Mexican peanut chili crisp oil ...and for my side I made scratch Made Mexican beans with custom spice grind. Such a great side dish to go with the tacos...
An old saying I still say today from my childhood... " We may be poor...but we eat like kings"!!

My Signature Key Lime Cheesecake....

But not just my Keylime cheesecake...

When Matty reached out to me...I thought "oh how cool" a new face a new client a new person that if I do a good job she would want to be the newest to our food family.... But.....!!!???? The plot thickens .....!!!!?????

She proceeds to tell me she is planning a surprise party for her mom because she is retiring...
Then I asked her.."oh ok cool" how did you hear about Esteban’s Culinary Creations ???? She then says..."found you on Facebook" Lori Heffely is my mom... !!!! 🤔😱🤯😁😊🥳😃..!!! And I was like "WHAT...!!?? Lori is your mom...???? And I'm thinking 🤔 She never really spoke of her children... 🤯

So...FOOD FAMILY...!!?
Lori has been part of our food family for quite a long while...I consider & her husband friends of mine ...They have constantly supported my Culinary Journey for a long time...with not only words of encouragement & affirmations... But has ordered many cheesecakes throughout our friendship...attended my Culinary pop up events I had at the old North Hill on Garland & trusted me to cater her wedding anniversary dinner one year....
So You All Absolutely Know That I Had To Blow This KeyLime Cheesecake Up & Elevate It To Stellar High Levels For This Absolutely Special Occasion...!!!
& To Be Honest.... What got me emotional about this whole story...!!??? Was her daughter... Matty reached out to me with the same trust her mother had a long time ago when she ordered her very first cheesecake from me...

Food Family.....!!!

These Are The Freshest Organic Farm Fresh Eggs...
& Anybody knows me knows how picky I am when it comes to the best...freshest ingredients for our culinary creations...
My friend... My brother Richard Schmidt raises & sells the best farm fresh chicken...duck...& Yes...Quail eggs...
Such great quality products from an amazing honest person & his family that genuinely care about what they are doing... I'm not only proud to know Richard & call him a friend...But as a personal chef...I am so grateful & glad I am able to support him by buying the products he & his family sells...!!

Inspired Once Again ...
I created this special dinner because I've always loved fish..
I have been fishing & eating fish since my early childhood....
And I love creating dishes with fish & fresh natural ingredients..

Custom spice grind..
Spiced ...flour/cornstarch..
Shallow pan fried white fish... Topped with feathered Parma cheese ..
Sauteed fresh asparagus with lemon zest...oil & fresh garlic...
Angel hair pasta al dente with a lemon butter garlic fresh parsley sauce....charred lemons...
Fresh made salad with tomato..olive...garlic...shallot...

Don't just eat to live ..
But live to eat....!!
Cook with your heart for the people you love...& Break Bread with strangers...we are all brothers & sisters ....

They asked for our already Krazy NutRageous cheesecake... But if anybody knows me I couldn't JUST do as I'm told 🤔😬🤭😁🧑‍🍳😱🤯🔥 I Wanted to do something EXTRA special for our first time clients.... I combined Reese's NutRageous candy bar with the Reese's Outrageous candy bar....& Added some (many) extras to this cheesecake... LETS GO....!!!!

NEW: Choco cookie crust...
Signature base cheesecake batter...
Homemade chocolate sauce...
& Topped with Reese's NutRageous & Outrageous candy bar crumble..
In-house made candied peanuts...
& Finally finished with caramel drizzle & chocolate drizzle...

Worked All Day To Make Sure Her Special Requested Dinner Was The Best That I Could Do...

Two Beef Birria Queso Tacos .
Grilled Corn / Mexican Style..

Scratch Made Consume..
6 different roasted peppers...
Blend of many warm spices toasted..
Fire Roasted vegetables..
Two cuts of beef / browned & pressure cooked...
Fried corn tortilla queso-birria tacos 2 cheese blend ..

Side condiments:
Shredded cabbage / cilantro slaw.
Pickled red onions..
Shallot / cilantro / lime slaw..

Dessert: The HuckDream Huckleberry Cheesecake..
