A significant number of the health benefits of Extra Virgin Olive Oil can be attributed to the biophenol content.
Biophenols are very effective antioxidants and contain several important biological properties including antioxidant, anti-inflammatory, and anti-cancer. They're also part of the characteristic pungent and bitter taste you'll find in our more robust high-biophenol single varietal Ultra Premium EVOOs.
All of our Ultra Premium EVOOs are independently lab tested and have a minimum biophenol content of 200ppm, with some ranging upwards of 700ppm or more.
Honey Ginger Soy Salmon
Love salmon? We do too! This delicious recipe includes a marinade to infuse delicious fresh flavours into the fish before baking and broiling (or grilling) finish it to perfection.
Ingredients
2 - 2.5 lbs whole salmon fillet with skin on
4 Tbsp Honey Ginger White Balsamic
4 Tbsp soy sauce/shoyu
2 Tbsp Cilantro & Roasted Onion Olive Oil
2 Tbsp Japanese Toasted Sesame Oil
1 Tbsp honey
1 fresh lemon
6 cloves garlic, minced
1 Tbsp freshly grated ginger
1/4 tsp freshly ground black pepper
1 red onion, chopped
2 stalks green onions, thinly sliced
1 chopped jalapeño pepper, seeds removed (optional)
Parsley for garnish
Directions
1. Use paper towels to thoroughly dry salmon fillet, removing excess moisture. Place salmon in a large glass baking dish and set aside.
2. In a bowl, use a hand whisk to mix together the Honey Ginger Balsamic, soy sauce, honey, Cilantro & Roasted Onion Olive Oil, Japanese Toasted Sesame oil, garlic, ginger, black pepper, green onions, lemon juice from fresh lemon, chopped onions and jalapeño. Pour mixture evenly over the salmon, ensuring salmon is coated with marinade. Cover and chill at least 6 hours to overnight, if possible.
3. Remove salmon from fridge and let sit at room temp while oven preheats to 350F (with rack on middle position) Transfer salmon to a large piece of aluminum foil and large rimmed baking sheet. Salmon should be skin-side down. Evenly distribute marinade over salmon. Cover salmon with aluminum foil and bake 10 minutes.
4. Remove the salmon from oven, move rack to upper position, and place salmon back on rack. Broil on high for about 5 minutes, watching carefully so salmon doesn’t burn. It should reach a nicely light golden color on top. Remove salmon from heat immediately and serve.
Pumpkin Spice Syrup
Although this doesn't include any olive oil or balsamic vinegar, we'd like to share our favourite recipe for real pumpkin spice syrup that we make every year to bring a delicious taste of fall to our warm beverages. We recommend weighing your ingredients if you can, but we've provided standard measurements as well in case you don't have a scale.
You can find all the whole spices in our tasting room from Inland Empire Spice!
Ingredients
1 1/2 cups (240g) sugar (we prefer either Sucanat or coconut sugar)
1 1/2 cups (320g) water
1/2 cup (100g) pumpkin purée
1 cinnamon stick
3-6 small pieces of mace (or use nutmeg if you'd prefer a little less "zip")
6 whole cloves
6 whole allspice
6-8 small pieces of dried ginger root (or one 1-2" piece of fresh ginger, crushed)
1 tsp vanilla extract
Directions
1. Mix all ingredients except vanilla in a sauce pan. Bring to a light boil and immediately turn down to a robust simmer.
2. Simmer for 6 minutes, stirring frequently.
3. Turn off the heat and add the vanilla. Cool for a few minutes and then strain into a jar. Keep as much of the purée solids as you'd like... it gets better with time!
