This was a special set. St. Croix Central will be celebrating Mindy on her 40th birthday. Aiming to raise money for scholarship funds. I did not have the honor to meet her, but her legacy is one for the books and I wanted her personality to be expressed through these cookies. These will be donated for a raffle basket at the fundraiser and I hope whoever ends up with them enjoys them just as much as I did making them! 🌈
