So a little about us (the snapshot version 😊)...Bryant started the "Rollin' Creole" several years ago around 2009 as a small catering business, serving up many of the Creole dishes that his mom prepared in her little cafe in Franklin, La where he and his siblings often helped out. His Houston co-workers fell in love with his Boudin, Crawfish Etouffee, Gumbos, Creole Court-Bouillon, boiled crawfish and more. What can I say, he has his mom's gift of cooking! I'm a Louisiana guy too from New Orleans, I know what good creole cuisine is supposed to taste like, but pretty much was a home cook who'd often complain about restaurant food that I knew I could cook better. From time to time I'd help Bryant out with catering events. This ultimately led to us fixing up an old truck and converting it into a food truck (that's a story all by itself!!!). I finally jumped in with both feet to share our love for cooking Louisiana Creole inspired foods, authentically prepared to serve more patrons, expand the menu and ideally gain a greater following. Neither one of us are "trained" cooks, we're not chefs...but ask any of clients if we can cook...lol. We look forward to serving you and your family and friends at your next function sometime soon. Be prepared...from time to time we like to throw in a little lagniappe on top of the planned menu just to say thanks for the opportunity 😉!
