You have been seeing hints of my latest baking passion, now it's time to fill you in on all the details! Fresh. Milled. Flour. Last May, a dear friend sent me a podcast episode about the health benefits of fresh-milled flour. Extra nutrients (think fiber, protein, magnesium, potassium, ETC!), better blood sugar regulation, and might solve seasonal allergies?! I was hooked. I got a home mill in June and began my experiments. My family and I LOVE the nutty flavor of the whole grain and have noticed increased energy and healthy microbiomes. I almost couldn't wait to share it with you all. This winter I've been testing all the recipes/grains/hydrations, etc. Let me just say that bread experiments are the yummiest kind. 😋 I have finally found a wonderful balance of grains in a sandwich loaf that I can share with you all! FRESH-MILLED SOURDOUGH
Naturally leavened, highly nutritious bread is what our bodies thrive on. I feel so blessed to be able to offer this to our community. The fresh-milled sourdough begins with the milling of fresh organic wheat berries: hard red wheat for high protein content, soft white wheat for fluffiness, and Khorasan for ancient nutrition. The wheat mills directly into the recipe, mixes with simple, natural ingredients, and ferments for at least 12 hours. The combination of fresh-milled and sourdough methods in this recipe ensures the protection of the naturally occurring nutrients for the benefit of your body.
