Flashback to a couple weeks ago when I used my great-great-grandmother's Pullman pan to bake the classic Pain De Mie (French mother of all sandwich bread). The same pan that fed my family generations ago continues to provide fresh bread for my family and this community. What an honor to continue the legacy of homemade bread! I'm already trying to instill a love of baking quality breads into my children so that bread-making never finds its end in my family. Real bread is a habit that's too good to let go. Do you have any baking heirlooms? I'd love to see/hear stories of how you're continuing the "homemade" legacy!

Okay, so sourdough has been a thing for a while now, and you probably know all about the health benefits...but I didn't want to risk it. So I made up this infographic just for you. 💛

Bread gets such a bad rep in today's world - and for good reason, with what highly processed flour is doing to our bodies. It's time to get back to a loaf that both gives us joy and nutrition. It's my mission to provide that very bread for this community.

Delivery is such a luxury in this busy world. wanted it to be easy for you to shop locally, and understood the importance of a central buying location. So they build an infrustructure to connect local buyers to local sellers through their Little Farm Association. PLUS they deliver everything you order to your door and central pickup locations. I signed up to be a local vendor with my fresh-milled breads about a month ago. You have been seeing hints of my latest baking passion, now it's time to fill you in on all the details! Fresh. Milled. Flour. Last May, a dear friend sent me a podcast episode about the health benefits of fresh-milled flour. Extra nutrients (think fiber, protein, magnesium, potassium, ETC!), better blood sugar regulation, and might solve seasonal allergies?! I was hooked. I got a home mill in June and began my experiments. My family and I LOVE the nutty flavor of the whole grain and have noticed increased energy and healthy microbiomes. I almost couldn't wait to share it with you all. This winter I've been testing all the recipes/grains/hydrations, etc. Let me just say that bread experiments are the yummiest kind. 😋 I have finally found a wonderful balance of grains in a sandwich loaf that I can share with you all! So, please welcome to the menu...

FRESH-MILLED SOURDOUGH
Naturally leavened, highly nutritious bread is what our bodies thrive on. I feel so blessed to be able to offer this to our community. The fresh-milled sourdough begins with the milling of fresh organic wheat berries: hard red wheat for high protein content, soft white wheat for fluffiness, and Khorasan for ancient nutrition. The wheat mills directly into the recipe, mixes with simple, natural ingredients, and ferments for at least 12 hours. The combination of fresh-milled and sourdough methods in this recipe ensures the protection of the naturally occurring nutrients for the benefit of your body.
