🌱 Nighttime Thoughts

While brushing sunflower seed hulls off a tray tonight, which is one of those tedious daily grower tasks, I found something beautiful.

A completely white sunflower seedling.
When I first started growing microgreens, I cannot count how many times I tried to separate these out and keep them growing.

They were so different. So striking. So beautiful.

But without chlorophyll, that seedling cannot continue to grow and live the way the others can.

Tonight, instead of trying to save it, I just stopped and looked at it.

It reminded me of a truth I sometimes forget:

I grow in a controlled environment. I manage the lights, the temperature, the airflow, the water, the soil, and the timing.

But I do not create life.

I can plant the seeds & care for what has been planted. I can do my best to provide the right conditions. But I am still working within God’s creation, not above it.

There have been times in life when I tried to force something simply because it looked beautiful, promising, or different. I wanted it to grow so badly that I ignored what was already being shown to me.

Sometimes faithfulness means nurturing what God has given us.

And sometimes wisdom means accepting that not everything we want to preserve was meant to continue.

Tonight, this little white seedling was a quiet reminder:
I can plant.
I can water.
But only God gives the growth.

“I planted the seed, Apollos watered it, but God has been making it grow.”

When the pantry gets low, the creativity gets good. 🥣✨

Tonight’s dessert bowl came together with a few of the last bites of some favorite small batch finds:

Vanilla fat free Greek yogurt, a little whipped cheesecake filling, chia seeds, the last of our Simply Grace Bakery granola, and the final drizzle of Glacier’s End Berry Butter.

I was genuinely sad to scrape the last of that berry butter from the jar, but paired with the creamy yogurt, cheesecake filling, and crunchy granola, it made the perfect end of the day treat.

One of my favorite things about buying from small producers is that you can taste the care that goes into what they make.

Every jar and every bag feels special, especially when you get down to the last serving.

Now I guess it is time to restock. 😊

After a busy farmers market, I came home to water trays and had to stop for a picture of these radish microgreens. 🌱

The mix of bright green leaves and purple pops of color is beautiful, but the flavor is what makes radish microgreens a favorite.

They have a fresh, crisp bite with a bold peppery finish, almost like a full-grown radish packed into a tender little green.

They are an easy way to add flavor, color, and texture to salads, sandwiches, wraps, tacos, eggs, grain bowls, or even as a finishing touch on dinner.

Radish microgreens are also known for naturally occurring antioxidants and nutrients, including vitamin C and beneficial plant compounds.

Research on radish microgreens has identified vitamin C, phenolics, flavonoids, anthocyanins, glucosinolates, and antioxidant activity, although nutrient levels vary by variety and growing conditions.

These are the kinds of quiet moments on the farm that never get old. Even after a long market day, seeing a tray this colorful reminds me why we love growing fresh, local food.

Broccoli microgreens are one of my favorite easy ways to add fresh greens to a warm bowl without making dinner more complicated.

Dinner tonight was simple, filling, and packed with flavor.

Ginger sesame chicken over jasmine rice with fresh broccoli microgreens, sesame ginger sauce, and toasted sesame seeds.

Easy protein.
Simple carbs.
Fresh greens.
Big flavor.

Healthy doesn’t have to be complicated.

Harvest Day Snack Break!

Strawberry nonfat Greek yogurt, fresh berries, and this absolutely delicious healthy granola from Simply Grace.

I picked it up during our Saturday at the Old Capitol Farmers Market, the first market of the season. It rained for a good part of the market, but honestly, that didn't detour people from stopping by!

This snack was simple, filling, and just enough sweet.

Full confession though… I pick out all the dried fruit and put it in Mike’s yogurt. 😂

Tonight’s dinner turned into something pretty special!

We had a massive whole chicken in the freezer, so I pressure cooked it, then roasted it last night.

That gave us a ton of leftovers… and even better, a rich homemade broth.

Tonight, I pulled some of that chicken, cooked tri-color quinoa right in the broth, and right at the end tossed in a few handfuls of our Brassica Blend microgreens.

Finished it off with micro leeks on top for that extra pop of flavor.

Simple. Filling. Packed with nutrients.

This is where microgreens really shine. Not just on a plate for looks… but built into meals that actually feed your family.
