Can’t believe it is nearly “Ber” month season. The garden is definitely slowing down but still ticking along.

The original beans are just about spent but the new starts are coming along and starting to produce. Not a lot but still.

This squash plant is over six feet tall and still going strong. Definitely helped trellising it and keeping the lower leaves cleared out.

Soon will be getting the next rounds of starts in the garden and hoop tunnels reset to carry them through the late season.

Well the ladies are still bringing in nectar. This late season honey will have a stronger flavor than most springtime honey. Producing honey from things like goldenrod, aster, joe pye weed…

We hope to get some of this late season honey around mid-September when we pull the last of the honey boxes off the hives!

Did you know that ALL pure, natural, raw honey will crystallize? Do you know why?

Honey contains …wait for it….sugars. Glucose and fructose to be specific. (Along with small portions of sucrose). Glucose forms crystals while fructose is liquid. So, the higher the glucose content the quicker the honey is likely to crystallize. This is especially true for unfiltered honey.

Raw unfiltered/unprocessed honey contains tiny bits of wax and pollen; the glucose crystals attach to those particles and grow. Look at you…you’re growing natural rock candy!

So where did it come from? The Glucose? Well depends on which flowers the bees gathered the nectar from. Dandelions, alfalfa, goldenrod and sunflowers are some plants that have high glucose levels.

Now crystallized honey is not for everyone’s taste but it is still honey. If you rather it be pourable, no worries there is an easy fix.

To reliquify honey - heat up some water (not hotter than 150) and place the bottle in it. Let it sit, give it a stir…done. Easy. Just make sure to secure the lid tightly. You don’t want water in it!

To slow the crystallization of your honey it’s best to store it in a room, temperature environment. Temperature around 70 degrees is ideal. Above our stove and fridge is our preferred location.

We have honey from five years ago that still has not crystallized, yet some of that honey kept in cooler areas crystallized within the first year. But man it still tastes amazing!
