We have learned A LOT in 2024, a lot that we will carry with us into 2025, and some we will leave in 2024. The most important thing we will carry into 2025? One simple word, integrity. We will continue to bring the integrity of “local” and “fresh” to every single plate we serve at our pop ups. Meaning 100% of what your eating is from a local farm, or a locally owned business at our pop up events, and will be able to produce a ingredients procurement list to reflect our integrity in that.
We learned, without a doubt, that you can serve food that is truly local and fresh. For us it is more than marketing, its what is ethically and morally right, no matter what way you look at it.
Despite criticism, pressures, and even less profit, we will continue to do what is right in this.
Wild foods will always be part of the food we serve, foraging is part of our very nature. It is our origin story. From as far back as i can remember, nature has absolutely fascinated me, as has cooking. Bringing the two together is only natural in what we do. So of course we will bring this into 2025.
We will also take with us and expand our efforts to serve and bring to the table “ozarks cuisine”. We will do this with our continuos efforts in defining and encapsulating what “Ozarks Cuisine” is through research of its origins, but also a broader spectrum of what Ozarks cuisene is in modern day settings. We were born in the Ozarks, it is where our heart is, and it is where we will continue to thrive.
My heart in doing foraging walks will always be to do them for free, this is a moral conviction i have, that i understand other teachers do not have. This is nothing against them, but only a personal conviction of mine. So we will continue to do free foraging walks in 2025.
As well as teach classes about processing foraged foods as much as we can.
