We have learned A LOT in 2024, a lot that we will carry with us into 2025, and some we will leave in 2024. The most important thing we will carry into 2025? One simple word, integrity. We will continue to bring the integrity of “local” and “fresh” to every single plate we serve at our pop ups. Meaning 100% of what your eating is from a local farm, or a locally owned business at our pop up events, and will be able to produce a ingredients procurement list to reflect our integrity in that.
We learned, without a doubt, that you can serve food that is truly local and fresh. For us it is more than marketing, its what is ethically and morally right, no matter what way you look at it.
Despite criticism, pressures, and even less profit, we will continue to do what is right in this.

Wild foods will always be part of the food we serve, foraging is part of our very nature. It is our origin story. From as far back as i can remember, nature has absolutely fascinated me, as has cooking. Bringing the two together is only natural in what we do. So of course we will bring this into 2025.

We will also take with us and expand our efforts to serve and bring to the table “ozarks cuisine”. We will do this with our continuos efforts in defining and encapsulating what “Ozarks Cuisine” is through research of its origins, but also a broader spectrum of what Ozarks cuisene is in modern day settings. We were born in the Ozarks, it is where our heart is, and it is where we will continue to thrive.

My heart in doing foraging walks will always be to do them for free, this is a moral conviction i have, that i understand other teachers do not have. This is nothing against them, but only a personal conviction of mine. So we will continue to do free foraging walks in 2025.
As well as teach classes about processing foraged foods as much as we can.

We hope to see you at a meal, share a smile with you and explore what nature has to offer through food and community in 2025

Located directly between Ozark and Branson ,nestled in the Ozark hills is one of my favorite farm stores.

Get there early because they sell out quick!
Today I dropped off some milk bottles, and bought a few dozen eggs.
Also selling unique culinary creations from local makers like cheese and homemade vanilla extract, this place is a have to for visiting!
And my favorite Melton Made Sourdough Bread can be found there as well.

Foraging in early winter ☺️
I am still finding lots of Curly Doc (Rumex crispus) around !
This broadleaf w**d is native to Europe and Western Asia, but not to Missouri.
Usually spreads by seeds around pastures and agricultural land.
Leaves get to be up to 12 inches long or more!
This is one of my favorite greens because of the flavor.
Lemony in taste woth almost no astringency that you would normally find in wild greens.
I LOVE making wild kimchi with this, stewed greens, or juiced to make tasty sauces and dressings!
Also fantastic stir fried with other vegetables ☺️
You can even find this pretty late in the winter around natural streams.

As we look back at our last year and all the progress we have made, I am so thankful for everyone that took time to help make true magic happen in the food, for the guest.
And for the guest that joined us at our events.

However I am always looking forward to what is next.
I will be taking a small break untill April with our pop up meals.
In that time I plan on doing a few things:
-Re-organizing EVERYTHING.
-Start my book that I plan to write.
-Re think every single dish and how I can refine it to make it better.
-Refine our service.
-We will be doing some re branding.
-Planning for all of 2025
-Creating more partnerships.
-Hiking and taking mental breaks.
-Doing a DEEP dive into Ozarks cuisine and what that is exactly.

And even things we can’t even announce yet but will be worked and thought out thoroughly in this time.

HOWEVER, I will still be offering catering and private chef services in this time.

I will make plenty of post during this time give in depth break downs of forged foods you can find in the ozarks and how to apply them in your food at home.

I hope everyone is going out and supporting a small business today☺️
What does it mean when I say our food is “hyper local”?

It means there isn’t just a few things on your plate from the local market,
It means everything on your plate is.
Foraged, farmed, or from a locally owned business.

Whether that’s from a local farm, or from a locally owned business, we are supporting the local market in a pure and transparent way.

Because smaller business means less food miles, a stronger local economy, more care and thought in product, and a support system that is worth far beyond a cheaper price somewhere else.

This is not a sales gimmick for us, this is a not a cheap ploy to be ethically correct.
This is the way food should be.
The way food was meant to be.
