MaMa T (and a little help from Z) put out a fine spread for some great folks yesterday evening.
Thank you NWTF for having us out.
Pop's Blazin Smokers was a BBQ Competition cooking team. The team consists of my wife, Theresa, and me, the "ZMan”! We started about 19 years ago.
Have cooked in Houston, Texas, north to Kansas, east to North Carolina, and all the southeastern states all the way home to Louisiana. For the past seven years we have quailified for the American Royal in Kansas and in the draw for the Jack Daniels contest both are world championships. Cooked in the Hoston Rodeo world championship BBQ contest this year and placed in the final with a fifth place brisket.

Pork Loins stuffed with Baby Spinach, Provolone Cheese, Sun-Dried Tomatoes, and Hard Salami.
Rubbed with Original Rub from Texasbbqrub.com.
Cooked on a Traeger Grill set at 225* for about 3 hours(depending on size of Loin) until internal temperature reaches 145-150*.
Simple, easy, and eye appealing treat for that special occasion.

When you get a call for 600 pork sandwiches we start with 200 pounds of pork and break out the Buffalo Chopper.

As great as Traeger Grills cook Chicken, they do Turkeys just as good! Moist bird every time! Don't get much better or easier.

We'll using the 1-2-3 method. 1- Remover Brisket from package.....2-Rub Brisket with Dry Rub....3-Throw that baby on the Grill.....Simple!

The "Z-Bomb", our valentine special treat for several years. Did not cook any this year but hopefully will next year.
Whole Pork Loins stuffed with Baby Spinach, Sun-Dried Tomatoes, Provolone Cheese, Hard Salami, and rub from Texasbbqrub.com (Original or Grand Champion). Once stuffed, hold together tightly and tie with butchers twine every 3-4 inches. This will require 3 hands;)
Some stuffing may squeeze out but you can push it back in.
***Use the oil from the Tomatoes as your binder for your rub, both inside and outside of the loin***
Fire up the pit and cook at 225* for about 4 hours, give or take. Smaller Loins will cook quicker.
Remove and let rest for approximately 30 minutes when internal temp reaches 150-155*.

Another day in Vinton, LA. yesterday. It was great to work with the wonderful group from Celabration Church. Great job guys! Many people were Blessed in so many ways.

Working along side with the wonderful group of folks from Southern Boyz Outdoors we served 263 plates of Jambalaya in about 17 minutes! The need is great.
There was also a big Pastalaya, 200 pounds pulled pork, and 1,000 Hot Dogs.
We’re going back Saturday to do it again. Vinton, LA.
